Peppers Roasted with Garlic, Basil and Tomatoes

Delicious and beautiful recipe. All those colors, the smell of garlic and basil, what's not to love?! Used all fresh, farm market produce and balsamic vinaigrette instead of herb vinegar. Will make this again, probably tonight because we inhaled it!

Buffalo Chicken Stuffed Shells

What a great idea, melding shells with buffalo chicken. Made a few revisions to make the dish a bit healthier: used cottage cheese instead of ricotta and added frozen chopped spinach to have a vegetable involved. I didn't squeeze the moisture out of the cottage cheese, just tossed it in. I did drain the spinach though. Rather then 3-4 hours I let the mixture sit over night, made the shells the next day for lunch. Used texans buffalo sauce and cut the butter in half. My husband says it's a top 10. This is certainly a keeper and the cottage cheese substitution saves hundreds of calories. Avoids that "brick-like" feeling from very rich foods.

I prepared this recipe correctly, it's just not for us. It's okay and we'll eat the rest, but I don't think I'll make it again. The flavors just aren't our thing.

Blueberry Cream Muffins

It's most certainly the sour cream that makes it. These are so moist and delicious, they never last long in the house. I've also made a pumpkin version using the basics of this recipe, cutting back the oil and adding butterscotch chips. They are truly amazing!

Chocopeanutbanana Smoothie

Absolutely delicious! I put them in freezer molds and the kids love them. Plus, its a great way to get them a little extra protein. Great as a post workout drink also. I used a gluten free, fat free, sugar free chocolate syrup. I know what you're thinking...gross! No, but really, it was very yummy. And no, splenda or sucrose were not used in the syrup.

Tangy Bean Soup

Quick, easy, and very comforting. Perfect for a January day. I added frozen tortellini to it 30 minutes before it was done and it added that little extra that made it truly comfort food. I didn't make the dumplings, already had cornbread on hand.

Asian Beef with Snow Peas

This wins in all categories! It's very tasty and simple to make. I have two small children so I need easy, flavorful meals to make and this one is a keeper. I changed nothing and served it over brown rice. We inhaled the leftovers so I'll have to make it again very soon. Might try different veggies next time to mix it up.

BBQ Pie

I thought this recipe was lacking something, like more veggies. Next time I think I'll put in a layer of broccoli or peas and carrots. It would be more shepherd's pie like which is fine with me. My husband really likes it, of course he's not as veggie crazy as myself.

Cranberry Pot Roast

Like others I used one can of regular and one can of jellied cranberries. Next time I'll use all regular because I love whole cranberries. I put in a bag of baby carrots half way through. Everything came out delicious. A nice, easy recipe.

Zucchini Pancakes

Fantastic! I have a toddler so making dinner quickly is a must. These are so simple and only took me about 20 minutes from start to finish. At first I followed the recipe exactly, then the next day I doctored them up. I added garlic, cold cut ham and chopped turkey kielbasa and wow! I will use the recipe over and over again!

Single Crust Peach Pie

I took the advice of others and added cinnamon, but why stop there... I cut the white sugar down to 1/2 cup, added 1/3 cup of brown sugar, 1/3 cup rolled oats and one extra tbls of butter. I also tossed the peaches in flour before adding to the pie. It wasn't runny at all and it's hard to tell if it would've been had a not used the flour. I also set the stove to broil for a minute to crispen up the top crust. It came out really good. I don't expect this pie will last long in my house.

Apple Dumpling Cake

I thought this was pretty good. I expected more of a doughy, dumpling-style consistency for the topping. I took out 1/4 cup of oil and didn't use any apple sauce so that probably had something to do with it. With all of the "oily" comments I was afraid to use a full cup. I made it really quick in a pinch for a dinner party so I wouldn't be surprised if I did something wrong. It was still very good though.

It tastes okay. Cinnamon adds a nice touch, needs more than a pinch though. Overall for the effort I'm not really thrilled with it. Will not make again. Sorry.

Vegetarian Four Cheese Lasagna

Just delicious! Takes a bit of work but it's worth it! I used yams instead of pumpkin as someone suggested. A great way to get more veggies into the diet. To "lighten" it I used cottage cheese in place of ricotta. Doesn't sit quiet as heavy and it melts the same.

Banana Bread Crumb Pudding

Sorry to say, I agree with past reviewers on the dryness. Even as I was putting the bread crumbs in I thought it wasn't going to turn out right. Just on sight it's far too much. Perhaps 2 cups, or better yet, instead of bread crumbs using cubed, toast bread. It did make the house smell good, but I'm afraid most of this will find it's way to the trash.
