Baked Whole Cauliflower

Reviewed: Dec. 20, 2002
I made this for my daughter and I last night. We ate the whole head! It was so good. I had some trouble getting the crumbs to stick but I waited until the head had cooled and used my hands and pressed the mixture into the head. I'm sure we will be eating this often.

Amby Rae's Cucumber Salad

Reviewed: Nov. 27, 2004
This was an interesting salad. I made it the nite before so it was a litttle watery but everyone loved it as an afterdinner type salad to clean the palate. I left out the olive oil, used dried spearmint, yogurt and 5 cukes.

J.P.'s Big Daddy Biscuits

Reviewed: Dec. 22, 2003
These were so good and so easy. I mixed up the dough in the morning and put it in the fridge to sit until supper time. I got 6 huge rolls, they could have been a meal in themselves.

Basic Flaky Pie Crust

Reviewed: Oct. 30, 2003
This is my new crust recipe! This came out just awesome, so buttery and flaky! I was able to double the recipe and used it to make a pot pie. I am sitting here thinking what else I can make to use this crust. **Hint to move the crust from one work surface to another and avoid cracking the crust roll the crust on to your rolling pin.

Very good! I added the cilantro right to the salsa instead of using it for garnish and everyone loved it!

Taco Casserole

Reviewed: Jul. 22, 2003
This one is a keeper. My family loved it! I made a few changes and used ground turkey instead of beef and added some jalapeno peppers to spice it up a bit. I was really leary about this one but they love it. And the leftovers are just as awesome. To freshen up the leftovers we've just added a few more crushed chips. This will definately be on the menu when tacos aren't exactly what we're looking for.

Baked Soy Lemon Chops

Reviewed: Apr. 15, 2003
I HAVE A FAMILY OF 4 AND MADE 6 CHOPS. I HAD NOTHING LEFT! THEY LOVED IT. I THINK THIS RECIPE WOULD BE GOOD FOR CHICKEN TOO. I made this with venison chops the other night and it was the best ever! I have told a few of my friends about this recipe and the different cuts and kinds of meat I have tried it on and they have come up with the same conclusion...this is a keeper. You can alter the recipe with onion or garlic added or just leave it alone and it is always one the family loves!

Armadillo Eggs

Reviewed: Feb. 27, 2003
WE USED THIS RECIPE FOR A MEXICAN THEMED DINNER PARTY AND THE HUSBANDS KEEP ASKING US TO MAKE MORE. INSTEAD OF USING ONE TYPE OF CHEESE WE DECIDED TO USE PEPPER JACK IN SOME OF THE JALAPENOS. THIS RECIPE WAS VERY GOOD AND WILL BE MADE OFTEN IN OUR HOMES.

My family loved this, for breakfast and even for a dessert! I am going to be making this alot! It did come out a little crumbly but I figured I'd add a little more milk the next time. I will be making this for dessert today and adding apples to it. A little bit of Reddi-whip and your all set.

Watermelon Salsa

Reviewed: Oct. 30, 2003
I made this recipe for a party I recently had and it was a hit! I followed everything to the T and all the ingredients came from my garden. Those who had found out that it was watermelon were afraid to try it at first but after trying it they all wanted the recipe.

Mexican Pork Chops

Reviewed: May 11, 2004
This is such a good recipe! I used diced tomatoes with chiles and cilantro and stewed tomatoes. I also added a little taco seasoning to the chops before I browned them. The chops were so moist. The leftovers are also awesome, I cut the leftover chops into strips and put everything in a tortilla shell. This one will be on our menu for good. Thanks for the recipe!

Chicken Casserole Del Sol

Reviewed: Aug. 21, 2005
This was good. I used Miracle whip instead of mayo, elbow mac instead of rigatoni and added an extra pinch of curry. It was a good change from the normal chicken casserole. My kids weren't to sure about it(it wasn't hotdogs or mac&cheese.), but my boyfriend had 2 helpings.
