Grilled Corn with Ancho Chile and Lime Butter

This was okay. My kids would rather have just plain old corn on the cob. My boyfriend and I thought it was a good change. When the kids aren't around I'll probably make it again.

Mexican Bean Stew

Very bland. I used a little more cumin, onion, garlic then the recipe called for, and I also added hamburger to it. And it just didn't have much flavor. I probaby won't make this again.

This was good. I used Miracle whip instead of mayo, elbow mac instead of rigatoni and added an extra pinch of curry. It was a good change from the normal chicken casserole. My kids weren't to sure about it(it wasn't hotdogs or mac&cheese.), but my boyfriend had 2 helpings.

Chocolate Chip Cookie Bars

After reading the reviews I decided to tweek the recipe a little. I added 1 egg, 2 tsps vanilla, 1/2 cup coconut and 1/2 cup oats and omitted the nuts. Put it in a glass 12x9 pan and cooked it at 325 for 25 minutes.

Strawberry Nut Muffins

I followed some of the other reviews and added mashed bananas instead of a whole cup of oil. I thought the time was approximate, I cooked the muffins for 20 minutes and got 18 large muffins. My family was unsure how they felt about the taste. They said they were good but not something they want added to the regular menu. I thought they were very good and would give them a 5 star review but the average in my family was a 3 star.

Amby Rae's Cucumber Salad

This was an interesting salad. I made it the nite before so it was a litttle watery but everyone loved it as an afterdinner type salad to clean the palate. I left out the olive oil, used dried spearmint, yogurt and 5 cukes.

Baked Oatmeal II

My family loved this, for breakfast and even for a dessert! I am going to be making this alot! It did come out a little crumbly but I figured I'd add a little more milk the next time. I will be making this for dessert today and adding apples to it. A little bit of Reddi-whip and your all set.

French Toast Casserole

I have to agree with both sides of the previous reviews, this was kinda mushy but it was very good. I cooked it a little longer than the recipe called for, 65 minutes. I doubled the recipe, so it basically took a whole loaf of bread, and there's no way I would have tried to make a loaf of bread into french toast it would take forever! This will be a good one for the bridal showers and bacherlor party mornings I have coming up in the next couple of months. Thanks for the great recipe!

Mexican Pork Chops

This is such a good recipe! I used diced tomatoes with chiles and cilantro and stewed tomatoes. I also added a little taco seasoning to the chops before I browned them. The chops were so moist. The leftovers are also awesome, I cut the leftover chops into strips and put everything in a tortilla shell. This one will be on our menu for good. Thanks for the recipe!

Roasted Asparagus and Garlic

My family thought this was a good way to make asparagus. I only had a can and I didn't know how to make it so I tried this way. As far as canned asparagus goes this was pretty good. I put everything in a foil pack and put on the grill for a few minutes until it was warmed. If I ever get another can of asparagus I will make it this way.

These were so good and so easy. I mixed up the dough in the morning and put it in the fridge to sit until supper time. I got 6 huge rolls, they could have been a meal in themselves.

Instant Rolls

These were very good. I made them with chili and my family loved them, they said they were the perfect roll to go with the chili. My 22 month old son couldn't get enough. Next time I think I'll try adding the ranch seasonings.
