Easy Spicy Chicken and Rice

This was okay, but I wouldn't make it again without some serious adjustments. As written, it tasted like canned tomatoes and soup, and wasn't very interesting. Also have to be careful not to spoon rice over the chicken, as it will not cook and soften. However, this is a good basis for something that could be pretty tasty with some changes.

Sour Cream Chicken Enchiladas

This is great--like others, we're adding it to our "Must have once a month" list. The sauce would be excellent as a dip or as a sauce over burritos, on tacos, etc.--it was the best part of the dish!

Sherry Sour Cream Chicken

My husband and I liked this very much--I skipped the thyme as I didn't have any, used chicken tenders which cut the cooking time by half, and also used light sour cream. The sauce had an incredible flavor and next time I plan to increase the amount of it so that it can be spooned over pasta or potatoes.

Barbecued Pork Chops

This was tasty, but as written the chops came out pretty dry. Next time I'll adjust the liquid and the cooking time and see what I can come up with. I also added some garlic powder to the sauce.

Minnesota Pork Chops

I scaled this down slightly to serve two, using th4e full amount of mushrooms, soup and bouillion, one cup of water, and six ounces of rice. Cooked for an hour and a half, the consistency was perfect. This was incredibly easy and yet would be great for company. My Minnesota native husband loved it.

Glen's Cheese Sauce

I served this over steamed broccoli and cauliflower. It had a wonderfully delicate flavor that set the vegetables off perfectly. My husband decreed that from now on, we shall have broccoli and cauliflower served no other way!
