Wonderful Fried Fish Tacos

OMG!!! Loved these. Hubby did the whole thing, said it was easy. Instead of just mayo he mixed it with sour cream and some seasoning. So yummy. The worst part was getting rid of the oil afterward.

Linda's Lasagna

I used this recipe instead of the other one with high ratings because it was easy. And it was easy and delicious. My mom used to make her lasagna with cottage cheese and when I found out it weirded me out. Now that I'm all grown up it seemed like the healthier option. I also substituted ground turkey for the beef. PS.. I think the person who said it was way to salty may have used garlic salt instead of garlic powder.

Chocolate Truffle Cookies with Sea Salt

Saved this recipe at Christmas time. Didn't make them until Valentine's. mmmmmmm the dark chocolate mixed with the salty top. Sweet n Salty in each bite. I made mine a little bigger since I used my small cookie scoop so I had to bake a little longer but they came out perfect.

Dark Chocolate Truffles

Made assorted coatings. Cocoa powder, powdered sugar, toasted nuts and toasted coconut flakes. Again, my husband thought these were store bought. Placed them in small foil bakers for a pretty presentation. Messy to make but worth it.

Pesto Pasta with Chicken

No flavor for our taste. It was good but boring. Not much more to say. Edit after leftovers: there was 3 servings of leftovers since there is only 2 of us. It was missing salt and pepper. We salted before we reheated and it was fine. The pesto needed a day to sit on the pasta. Much better the next day.

Spicy Indian Chicken and Mango Curry

I really liked this. It could have been a little spicer for my taste. Used frozen mango chunks from Trader Joes. Made it very easy to prepare. The brown basmati took longer to cook than this dish.

Curried Honey Mustard Chicken

We really love this recipe. I made it exactly as written the first time. The second time I made it I cut up the chicken and cooked it in the sauce on the stove. The curry was much more flavorful when cooked in the oven. Served it over white rice. This one is a keeper.

Mushroom Slow Cooker Roast Beef

The only mistake I made with this recipe is I didn't read the reviews first and spent $25 on a piece of meat. I will make this next time with a much cheaper cut of beef. Other than that it was fabulous. Made a nice gravy out of the juice and served it over mashed potatoes.

Traditional Macaroni and Cheese

I love this macaroni and cheese recipe. I have never made a decent one until I tried this version. And so darn easy!!!! I have shared this with everyone I know. I even made it at my best friends house for her Sunday dinner with her mother in law. Said it turned out great and since I doubled the recipe for her she said there were plenty of leftovers. This Mac n Cheese is even better the next day. I don't change anything usually but have added precooked bacon inside and crumbled on top. Delicious just the way it is.

Apple Braised Pork

Made this on a weeknight and it was so easy. Served it with corn and sweet potatoes. It was fantastic. This is an amazing fall recipe. I didn't change much, just didn't measure my herbs and used the whole can of apple concentrate. Mine cooked quicker than the suggested cooking time. Good thing I used a meat thermometer. Will make it again, and already shared it with my friends.
