After reading all the reviews, I used the following recipe: 1 1/2 c half-and-half, 1 1/2 can coconut milk, 1/3c cornstarch, 2 eggs, 3/4c sugar, 1/4 tsp salt, 1c flakes (1/4 toasted for topping, 3/4 for cream fililng), and I forgot to use the 1tsp vanilla. I made my own graham cracker crust and whipped topping in previous reviews. The flavor of this pie was delicious, but my filling was still very runny and soupy; not firm like the recipe or reviews stated. I wonder where I went wrong? I made it in the microwave for 5 min stirring after every min. I would make this pie again though, but maybe next time make the filling on the stove as originally called for.
