Mediterranean Lamb Burgers

We never had lamb burgers before and we loved this recipe. I did alter it, though. I omitted the mint and used chive and I the juice of 1/2 lemon into the meat. Moist and delicious. For the sauce I subbed sour cream for the yogurt as that is what I had on hand and I added chopped cucumber, the rest of the lemon juice and the garlic. We didn't have sliced feta, so we used crumbled on the bottom of the bun and put our burgers on top of the feta. My kids just loved these burgers!

Fig and Banana Loaf

Wow. This is a healthy recipe for a normally fat laden breakfast treat. I could not believe how moist this bread is with only the 2 tablespoons of oil. I didn't have whole wheat flour around, but I just used 3 cups of white, unbleached instead and just regular milk in place of the soy. Love. Love. Love. Yummy...I didn't feel a bit of guilt eating this and I can serve it in good conscience to my kids.

Absolutely Ultimate Marinade

Wow. I used this on ribeye steak without the soy sauce (my kids don't like soy) and subbed 1/4 lemon juice. I also left out the sugar. Who would have guessed that tahini in a marinade. The best. My 13 year old son had TWO whole steaks. I used a hand held blender to mix it all up and I think it would make a fantastic salad dressing, too.

Mom's Zucchini Bread

I feel guilty saying this, but this is better than my own mother's recipe. I only made slight changes. I dropped the sugar to 2 cups and added one 1 tsp of vanilla and one extra tsp of cinnamon I'm doing this to most recipes that use sugar to see if I can cut back without noticeable difference in flavor/texture. I find that if I up vanilla and the sweet spices that I can do that. I will cut back even more on the sugar next time to 1 3/4 c. and keep the 1 tsp of vanilla and 4 tsp of cinnamon.

Taco Seasoning II

Ok, but not enough kick to it. The kids, who usually like stuff on the milder side, even said it was bland. We had to add extra garlic powder, black pepper, salt and quite a bit more cayenne to give it some kick.

Made-in-Minutes No-Cook Fudge

I wish I could give it a 3.5 instead. Maybe this is a new taste for me.... so I'm just not used to it. It could grow on me. It sets up nicely..a bit softer than typical fudge and it couldn't get any easier! However, it was oily rather than creamy. I'm wondering if a version of this with some almond milk mixed in might do the trick. I don't know. I'd have to experiment. I will try it again, though.

M's Sloppy Joe Sauce

Yum. I made this with minor changes using what I had on hand. So, Dijon mustard instead of brown. Cider vinegar instead of white. I used a can of diced petite tomatoes and pureed that with the other sauce ingredients and added one extra clove of garlic to the mix. This was an easy, adaptable all purpose recipe. Good stuff.

Ruth's Grandma's Pie Crust

Only subbed out the shortening for butter. Used the recipe as directed otherwise. I did find that I needed more water, but that amount can vary anyway in a pie crust recipe depending upon the kind of flour used. Love it. Perfect. My first time making a crust with an egg. I will do it this way from now on.

Granny Kat's Pumpkin Roll

Good. I subbed acorn squash for the pumpkin because that is what I had around. The cake was delicious. Not quite enough filling though to cover the whole. I'd make this again for sure and up the cream cheese to 12 oz and adjust the rest the filling ingredients, too.

Bill's Blue Cheese Dressing

Not good. Too much salt. I almost halved the amount but thought I'd stick to the recipe on the first go. Don't care for this at all. Too much mayo. Not enough bleu cheese, also.

Quick and simple and they did fluff up. However, they were dry with a baking powder taste. I might try it again, but modify it more than I did already. I used 2 T. of softened butter.

Juiciest Hamburgers Ever

Just made these....Yum and moist. I was suspicious that these would taste like meatloaf with the egg and the breadcrumbs, but the burgers were a hit with the family. I made minor substitutions---Rice Crispy cereal in place of the crumbs and regular milk as we had those on hand.

Best Toffee Ever - Super Easy

This was the first time I've attempted toffee. I admit I did not use a candy thermometer, but just cooked until a dark amber color. Otherwise,I followed the recipe as written. We loved it. It was a tiny bit bitter, but next time I'll cook it for a shorter time and use a heavier pan as others have suggested. This is the perfect toffee texture. Yum.....my kids love it.
