Pumpkin Pancakes

Tasted just a little too eggy, and needed more of pumpkin and spice presence. It seems like it has promise, so I'll probably tinker some more with this.

Black-Eyed Peas and Gumbo

Only change I made was to substitute chopped green bell pepper for the okra, since bell pp are normally put into gumbo and my family has mixed opinions on okra. This was fabulous for New Year's Day. It tasted really good, and was not that time-consuming. Don't let making the roux intimidate you. As long as you keep the heat at medium and whisk or stir the whole time, you won't burn it before it turns that pretty roux color somewhere between peanut butter and chocolate. I made 6 cups of white rice to accompany this (4 cups chicken broth, 2 cups white rice, simmered for 20 minutes), and it was the perfect amount. Highly recommend.

Old-World Cabbage Soup

I thought this was a very honest, straightforward cabbage soup wherein the vegetables are really the star of the show. I found that the soup was just a little too sweet from the ketchup, so next time I might cut the ketchup back to 1/2 cup. Otherwise, I can totally see a gramma from the old world cooking this up for lunch.

Orange Roughy Parmesan

Thought this was bland. My kids forced themselves to eat it only because we threatened to withhold left-over birthday cake. Normally, my kids love fish dishes. Still on the lookout for easy, quick, good fish dishes.

Cucumber Sandwiches II

I served this at my daughter's birthday party since I knew there would be some vegetarians there. It was great; delicate without being bland. Will become a party and shower staple, especially since it's super quick and easy. Thanks!

Seven Layer Taco Dip

I left out the lettuce since I was making this for overnight, and I'm still convinced that was a good call. I thought the taco seasoning mix made things too salty. I might make this again, but will leave out the taco mix and lettuce. Just needs some tweaking.

Holy Smoked Bacon and Mushroom Penne

I thought this was really good. The only change I made was to remove the bacon and mushrooms from the grease before adding broth, so as to keep the bacon and mushrooms from getting too soggy.

Tomato Cucumber Salad with Mint

I don't normally like mint in my non-dessert dishes, but this was FANTASTIC! Tastes like summer. Use with Splenda, and you've got a very carb-friendly dish, too. I'll be making frequently! Thanks very much for sharing.

Chili con Carne I

I added about some water to the mixture as the last ingredient, since many had complained about it being too thick, then let the chili simmer without a lid for until it was the perfect balance of soupy and thick. I thought it was perfect! Thank you!

Cinnamon Spiced Coffee

I've made this before using a slightly different method, and had never paid much attention to proportions...which sometimes resulted in the cinammon taste being SO strong, that the coffee was bitter. Thanks for figuring out the proportions for me...it was perfect!

Roasted Chicken with Risotto and Caramelized Onions

I ended up using this as just a basic risotto recipe, because when I went to add the balsamic vinegar to my onions, doh! the bottle was empty. So prepared the risotto, added a 1/2 cup additional wine and about 1/2 cup of frozen peas and the caramelized onions at the end, stirring until wine was absored, and served with parmesan sprinkled on top. The onion flavor permeated the whole dish...oh so good, if you like caramelized onions, that is! I'll definitely have to try this again with the balsamic, was disappointed I wasn't able to this time. Regardless, thanks for the recipe!

Slow Cooker Barbeque

We apparently left the meat to cook too long, and the sugar in our bbq sauce burnt, giving the whole batch a very unpleasant bitter flavor. We had to throw the whole thing out. You could tell that if that hadn't happened it would have been a great recipe, but I think next time we'll let the meat cook first, and then add the bbq sauce in. Oh, well, lesson learned.

Best Marinara Sauce Yet

Wonderful, thank you! I didn't think that the addition of the tomato paste made the final product heavy, just gave it a more complex flavor. My 3 year old little girl is in a light eating phase, but she chowed down on this. Thanks for the recipe, it's a keeper!
