Hot Spinach Dip

Great base recipe. I used fresh spinach from the garden and added 2 cloves minced garlic, 1/8th cup minced onion, a can of chiles, and a can of water chestnuts. Add what ever you have on hand. Thank you Janie for the quick and flexible dip.

Italian-Style Swiss Chard

The only salt I used was in the boiling water and we found it too salty. Next time I will cut the salt in half for the boiling part and maybe rinse it while draining. I think I would have liked it but I couldn't get past the salt taste. I will try it again.

Pumpkin Black Bean Soup

Followed the recipe as written the best I could while being vegetarian. Vegetable broth instead of beef, and no ham. EXCELLENT!! Thank you for submitting such a great recipe with healthy ingredients. Easy to use home grown veggies instead too.

Brie and Mushroom Phyllo Puffs

I added just a TB of red wine while cooking the mushrooms and garlic, otherwise followed the recipe. They turned out good, not great. The only thing I could taste at first was butter. I will make again but use half the butter in mushrooms and half the amount on the phyllo. I used the sheets, and started using 3 layers (instead of 2) half way through. The 3 layer phyllo turned out better, you could taste the brie and mushrooms better. Thank you for sharing a great recipe!

Stuffed Pattypan Squash

Excellent! I'm a vegetarian so I used a small amount of olive oil and added olives and tomatoes to the filling. My husband loved this recipe too, and he is a carnivore. Squash turned out tender, tasty and pretty. I will make this again since I have an abundance of patty pan squash from my garden. Thank you for sharing!

Zucchini and Eggs

I have made this for years, add a bit of garlic, and or hot sauce and throw in a warm tortilla. I eat it for breakfast whenever I have fresh zuchini.
