Grandmother's Buttermilk Cornbread

Reviewed: Mar. 2, 2011
Absolutely wonderful cornbread. Super super sweet. I was making it to go with Taco Soup and it was too sweet for my tastes with that particular meal. However, I could have just eaten the cornbread for dinner. My husband thought it was a little undercooked, but I think it was simply that it was so moist and sweet that it seemed doughy because it was completely cooked through.

Chocolate Chip Banana Muffins

Reviewed: Mar. 2, 2011
These are so good. I cannot stop eating them. I did use Mini chocolate chips and could have used less, but I love chocolate. I did use half whole wheat flour and it was fine. Don't know that anyone will know the difference! Thanks for a wonderful muffin recipe.

Grilled Chicken Adobo

Reviewed: Jan. 10, 2011
Very yummy. Didn't think it tasted too salty. I think I like it better not grilled. I put a couple of the pieces on the Forman since it's too cold outside. I prefer the ungrilled pieces of chicken. Will def add to our meal rotation!

Turkey Meatballs in Garlic Sauce

Reviewed: Jan. 12, 2010
We did like it and I will definitley try it again. Like the others, I did not have V8, but subbed a can of tomato paste and thinned it out with the chicken broth. I'm not a huge fan of ground turkey, but did really enjoy it with this recipe.

Extreme Banana Nut Bread 'EBNB'

Reviewed: Dec. 24, 2008
Haven't tasted yet, but they look awful! I used mini pans since I wanted to give them away. They rose up very nicely and got brown quickly. I did cook shorter time than called for b/c I was using smaller pans. With toothpick test, they were done, but after taking them out of oven, the centers have fallen/sunk in completely. Not sure what I will try differently next time or if there will be a next time!

To Die For Blueberry Muffins

Reviewed: Dec. 7, 2008
These are tasty and really easy to make. Not the absolute best I've ever eaten, but very good. My first batch did not rise up much at all. (I took the advice and didn't fill the muffin tin all the way up.) They were not pretty at all. The second batch I filled up to the top of tin and they rose up very high and into the next muffin, so that I had to cut the muffins apart. Otherwise, tasty and easy to make. Lots of good comments from the people who ate them!

White Chip Chocolate Cookies

Reviewed: May 9, 2008
I love, love this cookie. I did sub 1/4 cup brown sugar for the white sugar. It was fine. And I didn't like it with white chocolate, so I used semi-sweet. Thinking of experimenting with adding pecans or M&Ms. One of my new fav recipes.

MMMMM... Brownies

Reviewed: May 9, 2008
I love this brownie! After reading that some people said they came out cakey, I was a bit worried b/c I love a fudgy brownie. I am a total box brownie lover, but this is tops! I think it's the perfect combo of cakey and fudgy. The only downfall is that it doesn't cut into squares really well, but many brownies don't. I'm making them for a community bake sale and I'm sure they will be a hit even if they don't look like perfect little squares. And the bonus is that I get to eat the ones that look a little too mangled!

Light Chocolate Chip Cookies

Reviewed: Mar. 28, 2007
Very yummy cookies. Crisp/crunchy on the edges and soft goodness in the middle. I usually use the Toll House recipe but only had one egg and really wanted chocolate chip cookies. I love that it is a smaller batch of cookies too, since I usually eat a ton of them!

Chicken Fried Chicken

Reviewed: Feb. 28, 2007
I loved this recipe. It was my first time making chicken fried chicken and it was pretty easy. I would have given it a five with my minor changes. After reading other reviews, I added much more spices/flavor to the crumb/batter. I added cayene pepper, paprika, lemon pepper, lots of ground black pepper, garlic salt, and oregano. We love lots of flavor and hubby said it could have used even more spice/flavor to it. I also used more oil than listed...just enough to really cover the bottom of my large pan.
