Cranberry Orange Bread

I've made this recipe several times, it's really good. I prefer to make them as muffins (I baked them for 20 minutes) because it's easy to portion out. I do use 1 cup of OJ because I read the reviews and people commented it was dry. 1 cup works well for me, whether I bake it in a loaf or in the muffin tin. I also skip the grated orange zest because I never have it. It's still delicious. I reduce the butter for health reasons and even though I grease the muffin tins, it still sticks. It's never an issue for me, I'd prefer it to be healthier and just take extra care removing the muffins.

Pear Braised Pork Tenderloin

I was blown away by this recipe. Following reviews, I seared my pork tenderloin (4) pieces on a cast iron, then turned off the heat, dumped the pear mixture and some diced onions on top (didn't have pearl onions). I used an inexpensive but good white bordeaux and baked covered for half an hour at 375. It came out perfect! Will definitely make this again.

Keema Aloo (Ground Beef and Potatoes)

I used spray-on coconut oil that I bought from Trader Joe's to saute the onions in my attempt to make it a little less oily/fattening (I Knew the ground beef would yield a lot of oil and fat). I didn't have a pepper or peas but it came out delicious. It's a nice hearty meal for a cold day. Make sure you cut the potatoes small so they can cook faster.

Delicious Rosemary Bread

Yum! This came out incredibly good for my first attempt at making bread. My husband was super impressed. I used 1 cup of whole wheat flour and 2 cups of white flour. My dough was very tacky so I needed the full 3 cups. I read the reviews and did an egg white wash, sprinkled remaining rosemary and some garlic powder on top and bake for 20 minutes. The crust was lightly browned and had a nice texture. The bread was a little dense but it was still really delicious. I made this because I had extra rosemary that I didn't know what to do with but I'll definitely be making this again.
