Napa Cabbage Salad

This was SO yummy, I basically ate the whole thing in 3 days. One thing I did was increase the ramen noodle packages to 2 packages and added a tiny bit more butter to compensate for the extra noodles, and I liked having the extra crispies. However I do have some left over after the cabbage is gone, so it's not totally necessary. Everything else I did exactly like the recipe and it was wonderful and SO easy. I've kept the dressing and crispies separately from the cabbage mixture, so when I've wanted this salad for lunch I've just tossed it together. This is a definite repeat at my house!

Portuguese Kale Soup

This is a decent recipe but it had VERY little flavor until we added coriander, bay leaves, cumin, chili paste, thyme, garlic, pepper, and a truckload of salt. The cabbage I thought was unnecessary. All that said I've eaten 2+ bowls at each sitting and really like the dish. The recipe just needs some serious tricking up. Next time I would also add perhaps another half pound of sausage to compensate for the huge amount of soup it makes.

Roasted Garlic Cauliflower

Yum! I am writing for two families, because I tried it and it was delicious, and more importantly my kids ate it and my husband said "this cauliflower actually has flavor!" It did not take as long to bake as the recipe called for. I baked it for only 20 minutes before putting the cheese on top. Then, I told my friend about it, and she made it and said her young children ate a ton too, and it was definitely easy and yummy. Highly recommended, and not that much more trouble that the basic steaming method - but the results are 1000% better!

Turkish Fish Stew

This was so great! Next time I will try a blend of black and green olives, as I think some kalamata olives would really add to this dish. Yes, there was a lot of couscous but you can just use the suggested servings on your couscous container to make as much as you want. We doubled the recipe of the stew but kept the couscous amount the same, and there was enough. I will be making this for my family on Thanksgiving weekend since it was so easy to double and so delicious!

Thumbprint Shortbread Cookies

These are great to make with kids. My husband loves them because they're not too sweet and they're so simple. The batch size is small enough that we make them frequently. My 4-year-old loves to make the thumbprint!

Lemon Thyme Chicken

This was really great and easy. Everyone in my family was able to eat it, because the chicken without the sauce was very delicious too, and kid-friendly. My only hiccups were that I forgot to reserve some flour mixture for the sauce, therefore I had to make more, and then the sauce came out too salty. The salt was probably because I used dehydrated chicken boullion with water instead of typical canned broth. But despite those two cook's errors, the recipe was really easy to follow and came out exactly as planned. Yum! A definite weeknight do-again.

Shortbread Supreme

Yikes! I have just had the biggest problem with this recipe. I may be shortbread challenged, but this dough was not rolling out for me at all, then once I finally got the cookies onto the baking sheet it was browning unevenly when baked. I have just dumped the last half of my dough in the trash because it doesn't seem worth it to continue. Plus, my unevenly browned cookies would really need to be iced in order to be tasty. My suggestion - try another recipe if you intend to do more traditional cookie cut-outs.
