Black-Eyed Pea Gumbo

Reviewed: Jan. 1, 2012
OK, does anyone beside me see that there is corn and sausage in the picture, but not in the recipe? I added both and it is yummy. Gotta have black eyed peas on New Years day!

Beef Tips and Noodles

Reviewed: Oct. 14, 2013
I've been making this recipe for many years. Mine is called "no peek casserole" Same ingredients as above. However, you place the ingredients in a covered casserole for 3 hours at 300 degrees. The meat is melt in your mouth tender.

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Nov. 24, 2013
I have made this salad numerous times over the years and it's great! As with some of the other reviewers, I back off on the sugar a bit and it's still great. I too prefer to leave the skin on the fruit for color. I also make this in summer and substitute red grapes for dried cranberries.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 2, 2014
Definitely cook the chicken in the soup. I thought this was good, not great. Will make again, but will "spice" it up a little more and add black beans next time.

Baked Parmesan Tilapia

Reviewed: Apr. 11, 2013
It was good. As the other reviewers suggested, I used olive oil to moisten the crumb mixture. The fish did turn out crispy. I would make this again, but maybe with shrimp or cod.

Balsamic Pear, Chicken, and Asparagus

Reviewed: Apr. 9, 2013
I omitted the ginger, but one spice shouldn't make that much difference in a recipe. My family thought it was OK. Doubt I'll make it again.

Quick Chicken Piccata

Reviewed: Feb. 28, 2013
I agree with many of the reviewers, too much lemon flavor and it did not thicken up. I was hoping it would be like the Chicken Piccata that Cheese Cake Factory has...the BEST. I may try again, but would cut the lemon in half and add cornstarch to thicken.

I made this last night with a tenderloin. Yummy! I marinated for 6 hours and used fresh garlic. I will use this easy marinate on pork or chicken.
