Crustless Spinach Quiche

Excellent taste. I used a 16oz bag of frozen spinach. It seems you could definitely use less than 3 cups of cheese. I used a multitude of cheeses (whatever was in the fridge...to get rid of leftovers); there was baby Swiss, gruyere, cheddar and Colby jack. I will make adaptations and definitely try this again.

Baked Omelet

It was delicious and so easy! Only change was the type of cheese...I used Colby jack and Swiss because that's what I had on hand. I did have to increase the baking time to 55 minutes. Will definitely make again!

Stuffed Shells IV

This has really good taste. Instead of stuffing shells, I used ziti and made it like baked ziti instead. I put some of the sauce at the bottom, mixed the pasta with the filling and covered it with the rest of the sauce and cheese. It made a 13 x 9 pan, which was too much for us but leftovers were fantastic. I will split into two 8 x 8 pans next time and freeze one. Only other change was no mushrooms because my husband doesn't like them. Will definitely make again.

Classic Goulash

Overall, I liked the recipe, but it had way too much Italian seasoning in it. I even used less than the recipe called for. I will make it again, but with about 1/2 the Italian seasoning.

Quick and Easy Green Chile Chicken Enchilada Casserole

I loved this recipe. As mentioned in other reviews, I mixed the chicken and the sour cream (along with some added cumin and paprika). It turned out fantastic! Will definitely make again.

Old Fashioned Mac and Cheese

This was good but not the best I have tasted. Followed the recipe exactly...and it wasn't as creamy as I would have liked. Very super cheesy, though...almost too much (like that's possible!).

Mexican-Style Goulash

As it is written, it's a 3 star recipe. I added an extra 1/3 cup macaroni, 1 tbsp taco seasoning, an extra 1/3 cup water, 2 cloves of garlic, a can of drained black beans, and some black pepper. It was better then, but still not stellar.

Amish Breakfast Casserole

This is excellent. I did use a pound of pork sausage instead of bacon (simply because that's what was in the freezer). Baking time was increased to 50 minutes, because it wasn't set at 40 minutes. It has great flavor and my 3 year old really liked it. We had it for dinner tonight and I am looking forward to leftovers. A great recipe that I will definitely make again, and I will try bacon next time.

Best Ziti Ever

This was fantastic and very easy to make. Next time, I will put in two 8 x8 pans and freeze one. It made a lot and we are only a family of three. Looking forward to leftovers though!

Tomato Chicken Parmesan

This is a good tasting recipe. As written, this makes too much greasing; so, next time, I will halve the amount (along with the egg). It will (did) burn if you fry the chicken for the directed time. I used shredded mozzarella, because that is what I had on hand. My 3 year old, who doesn't eat or like a lot of chicken, ate and seemed to like it! Will make again with mentioned modifications.
