Teriyaki and Pineapple Chicken
I made this recipe with a few changes because of what I had on hand. I only had green bell pepper, omitted the mushroom but decided to add a few chopped carrots. I did not chop the onion instead did thin slices. I marinated my chicken for almost 30min in lawrys teriyaki marinade and used that instead of teriyaki sauce. I did not use the pineapple juice but used more pineapples(almost the whole 20 oz can). I did not have crushed red pepper so tried with cayenne red pepper. Served this over white rice. It was very good, but next time I will only use 1/2 tsp of rep pepper. The spice was very noticeable. Overall good recipe, plus quick and easy.

Quick and Easy Pancit
I don't know if I didn't wait long enough for the noodles to soak or what but this wasn't as good as I had hoped. I didn't put in the chicken as I was making this as a side dish to go with lumpia. My husband said the texture of the noodles he couldn't get past but had a good flavor. I thought the flavor was a little to bland. The only flavoring was the garlic and soy sauce. I even added more soy sauce than recommended. I need someone who knows how to make pancit so I can taste it again and see if it was just me making it wrong or I just don't like pancit. I thought I had it before and loved it but if this is what it is suppose to taste like then I don't think I do.

Chef John's Italian Meatballs
This recipe is perfect just the way it is. I had never made meatballs, I just usually did spaghetti sauce on my noodles. So glad I tried this. My husband loves to eat the meatballs all by themselves.
