Pecan Pie V

I was so happy to find a recipe for pecan pie that didn't have corn syrup in the ingredient list... This pie was easy to make and SUPER DELICIOUS!!!

Orange-Scented Grilled Lobster Tails

Instead of the typical gifts purchased while on vacation, my wonderful boyfriend brought me home lobster that he caught with his own hands while in the Keys!! This was my first attempt at cooking lobster... but thanks to this recipe, another spectacular dinner was created by Mrs. Jones! The marinade was super delicious even without the bitters. I also cooked them under the broiler for about 15 - 20 minutes only because I don't have a grill anymore :-(

Barbequed Pineapple

I was thrilled to see a recipe for pineapple that wasn't upside-down in a cake... I was even more thrilled with the flavor of these grilled delicacies!! We grilled them along side some Thursday night hot dogs and transformed our tube steak dinner into a festive summertime soiree!!!

California Bean Dip

I served this with corn chips as part of my "Super Bowl Spread" and the guys devoured every last corn kernel!! The only alterations I followed were to use a package of frozen Baby white corn mixed w/some frozen yellow corn instead of canned (thawed in the micro, of course), as well as to add some chopped green and red bell peppers. I left the concoction in the fridge overnight so the taste medley could be perfected and it was excellent!!!

Chicken Pesto Pizza

I was looking for an alternative to the usual Thursday "pizza night" and BABOOM...This pizza was da bomb!!! I used a can of Italian inspired diced tomatoes instead of slices, added some onion, mushrooms, and a variety of white cheeses. Absolutely Delicious, with a capital D !!!

Maryland Crab Cakes III

I have tried numerous crab cake recipes from this site and this one is definitely the BEST!! They are super easy to make and there's not a big, sloppy mess to clean up afterwards!! I crunched up some oyster crackers (with a little extra salt) instead of using Saltines and I formed the patties using a couple of sheets of plastic wrap (so I wouldn't get my hands all yucky). What an EXCELLENT and healthy (not fried) crab cake recipe... Thanks!!

Fudge Truffle Cheesecake

If this doesn't hit "the chocolate spot," nothing will !! The only change I made to the recipe was to use Kahlua instead of vanilla extract (only because I didn't have any on hand). But I must say, the substitution was a brilliant idea!! It made this decadent dessert that much more sinfully good!! Great recipe !!!!

Ginger Crab Cakes

Well... even if my husband thought these were "the best he's ever eaten," I am the Queen so it's my opinion that really counts!! Not only was this the messiest, pain-in-the butt stuff to make, but also they were not as tasty as I was expecting them to be. Perhaps my opinion on their taste was swayed by the mess I had to clean up... but I still thought they were "missing something." I won't make these again unless hubby absolutely insists!!

New Year's Day Black-Eyed Peas

DELICIOUS !!! If eating these peas doesn't bring me luck this year I don't know what will... I only made a few changes: I used a can of diced tomatoes instead of liquefying a can of whole ones, substituted a tsp. of minced garlic for the powder, and used one onion instead of two. We ate these with barbequed ribs but the peas were a meal in themselves. Next time we will just have some rice on the side... This recipe helped me create an awesome New Year's tradition in my house!!!

Easy Roasted Pork

WOW... This has to be the EASIEST and most DELICIOUS recipe I've made to date!! I browned a 3.85lb pork loin roast on the stovetop in some butter. Then I put some whole pecans on the bottom of my slow cooker and added the roast. Finally I poured a double batch of the brown sugar sauce (made w/chunky applesauce) on top and let it cook for about 4 hours on high. It came out perfectly tender and juicy... and the addition of pecans was an unexpected flavor bonus!! Served w/mashed potatoes and Green Giant's frozen green beans w/almonds... I now have a new favorite dinner!!

Real Italian Calzones

Southern Banana Pudding

Awesome, yet easy!! My husband usually makes it the old-fashioned, true southern, messy kitchen way and he LOVED my quick, no-cook way better!! I sprinkled some cinnamon on top to give it some "right-outta-the-oven" color and this addition gave it an extra special kick of flavor!! We will never make banana pudding by the old school rules again!!

Gravy Baked Pork Chops

I was searching for a "different" way of preparing pork chops and walah! This recipe turned out one of the best dinners I've made for my hubby and it was just TOO easy to make!! The only changes I followed was adding garlic powder, omitting the water, and cooking for less time(since I only made 2 not as thick chops). Excellent served with brown rice and biscuits!

Spicy Bean Salsa

This is the BEST dip I have made in a while... even the picky neighbors enjoyed it!! Excellent choice for summertime get-togethers. Make a day ahead so the flavors have a chance to mingle!

Super Bowl Salsa Dip

Great recipe, but a couple of cautions to take into consideration: 1) I used spicey sausage, spicey salsa, and Mexican inspired diced tomatoes which created an EXTRA spicey dip (too spicey for me). I will use a few "regular" flavored items next time. 2) This recipe makes A LOT of dip as-is, be prepared for left-overs!

Chicken Breasts with Herb Basting Sauce

Chicken, Stuffing and Green Bean Casserole

This stuff is THE BOMB!! I was a big hit with the neighbors at our potluck!! I used Green Giant's Green Beans with Almonds and added cheddar cheese to the mixture as well as on top... added some french-fried onions... then topped with some Stove-Top stuffing... delicious!!

Macadamia Nut White Chip Pumpkin Cookies
