Roasted Pears with Caramel Sauce
substituted margarine for butter, almonds for pistachios, and added a sprinkle of cinnamon. this was sooo awesome! short and sweet.

Quinoa and Black Beans
This dish was pretty good, however I think I may have misjudged on the cumin and added a little too much, as it had a strange aftertaste, which pepper helped to mask. I'll make this again, and be more careful about that. We had it as a meal, but both agreed it would be better as a side to something. I used a can of corn instead of frozen, and also only used one can of beans, but I think it would be good with one or two, depending on your liking of beans.

Gingerbread I
I had a spur of the moment christmas feeling, and needed a gingerbread cake, and this was the most compatable recipe I found- I substituted the water for orange juice, and both molasses and white sugar for brown sugar, and added ground cloves and nutmeg. Was absolutely delicious with an orange juice and sugar glaze.
