The basic recipe is very close to mine, although I use ketchup, the jumbo muffin tins, add a layer of creamy spinach and top it with mashed potatoes, bake it and then freeze it for lunches at work for my husband and I.

Chicken and Biscuit Casserole

Great basic recipe, but in good conscience I could never serve my family canned peas! I used chicken stock instead of broth, chopped the celery and carrot smaller, and have tried using double the biscuits, and garlic/chive mashed potatoes instead . The mashed potatoes win, hands down.

Margarita Grilled Shrimp

Even though I was away from a printer, and did forget several key ingredients, it was AMAZING! I used 2 T tequila, 2 T fresh squeezed lime juice, 1/4 lemon wedge fresh squeezed, and chopped flat leaf parsley since I can't stand cilantro. A dash of sea salt, a bit of fresh cracked pepper, and it was phenomenal

Salmon with Dill

I do mine a bit differently. I rub olive oil on a nice platter, rub the excess on the salmon, sprinkle with a bit of sea salt, fresh cracked pepper, and fresh or dried dill weed, then slow bake it in the oven. I use the olive oil for a better fat for dietary reasons.

Kelsey's Favorite Stuffed Green Peppers

I made this tonight, it was pretty tasty but I changed it to match our dietary restrictions. I didn't parboil the peppers, they baked just fine in the time I alloted them in the oven. I used brown rice instead of white, about half a cup uncooked, ground turkey, and added a can of Rotel to the can of tomato sauce, and added some chopped fresh garlic. I boiled the rice with 1 t of garlic powder in the water. I used way less mozzarella (fat free) and mixed in a bit of low fat parmesan. The used of the ground turkey eliminated a large amount of fat in the bottom of the peppers. I will make it again, probably change it everytime! Great starter recipe.

Scrambled Egg Muffins

I used a mix of egg beaters and egg whites, with 1 T of fat free sour cream for each egg equivalent. A touch of dill weed, turkey sausage and it is an elegant meal fit for a couple of old diabetics

Grandma's Gingersnap Cookies

I can't believe it, I finally found MY Grandma's Gingersnap recipe! My grandma taught me this recipe when I was about 10. My recipe box was stolen in 1999, and I have yet to replace some of the recipes. Judging my the comment about 1899, our Grandmas must have been about the same age!

Basic Chicken Salad

Great starter...aka basic recipe. For personal tastes, I added chopped green onion tops, about a T of chopped peeled cucumber and swapped chopped cashews for almonds I also use light mayo due to dietary restrictions.

Prosciutto Parmesan Pasta

I went ahead with the 1/4 lb of diced procuitto, but used fat free half and half and a smidge of flour for the sauce. Let me just add here that NO canned peas have been in my household in over 40 yrs, nor will they ever darken my door. I used frozen peas.

Southern Grilled Barbecued Ribs

This recipe was good right out of the printer! I have always basted my ribs in the vinegar solution in the oven, so that was pretty much a given. This sauce is fantastic, although I am not a friend of spicy. I made one batch spicy, and one batch for wimps like me. The sauce is also fabulous for BBQ chicken, or brushed on burgers. Haven't tried it on salmon yet.....hmmmmmmmmmm...

Foolproof Rib Roast

I give the 5 star rating for the first time I cooked this, it was awesome. The second time, I didn't adjust it enough for the weight of the meat, and neither my husband or I are crazy about well done beef, but it still tasted good!

Spanish Rice Original

Let's see, this one was a fun recipe. I used brown rice instead of white due to dietary restrictions. I also omitted the olives, too salty, used a cup of frozen corn instead of the canned (also less sodium)and used 1/2 t Cumin for a bit of smoky flavor. I think my guests are still licking out the pot I cooked it in!!
