Blueberry Stuffed French Toast

Very good recipe without to much fuss, my family enjoyed it. I too made a few changes: I discovered I had run out of white sugar so I used brown sugar in the wet mixture and also as the topping except with cinnamon instead of nutmeg. I used a small baguette cut into slices as the bread covering the bottom then pulling apart the cheese into chunks and scattering over the layer of sliced bread which made for nice warm chunks of cheese to bite into after baking. I used strawberries instead of blueberries. I baked at 450 instaed of the 350 for about 30 mins and it cooked perfectly. I was originally going to try to make the compote using powdered sugar but opted to not make it after all. I used syrup over the top for the kids whereas my hubby and I opted for no topping at all as it was plenty sweet.

This was very good as far as cheesecakes go. I was however a little disappointed in how it looked. It could have been baker error but I would have liked it to look a bit more prettier.

Pumpkin Zucchini Bread

This is a delicious recipe! I added about double the zucchini and I used canned pumpkin pie mix instead of regular pumpkin and added a little more than the recipe states. I added a bit more cinnamon and extra walnuts as well. I made muffins instead of the bread and baked at the same temp for 25 mins...they turned out great, moist and so delicious!

Sopapilla Cheesecake Pie

I have made this several times and everyone I have made it for loves it! It is a simple recipe that can be pulled together quickly. I like to serve it warm as others have suggested. I don't add the honey automatically, I offer it as a topping option as well as the choice of hot fudge sauce and whip cream and caramel sauce is also a great addition...delish!!
