Chef John's Chili Chocolate Cookies

DECADENT. If you love dark chocolate, these are for you. The only chocolate I used was a bag of semi-sweet chocolate chips (11.5 oz, divided). It worked out superbly, in my opinion. (I didn't have a stainless steel bowl so I melted, slowly, in a glass bowl in the microwave.) I didn't have currants so I used dried cranberries, and I didn't have Kahlua so I made a small batch of homemade; it wasn't authentic, but it was DELICIOUS, and boy did it enhance these cookies. (I had a little rum I'd bought for Chef John's pineapple upside cake, and Wikipedia says Kahlua is made with rum not vodka.) The pepper gives you a little surprise only after you've had a few bites. I recommend eating these the next day--after you've given your mouth time to recover from licking the bowl! (Or maybe resist licking the bowl.) I'm sending these to my daughter at college who loves chocolate chili candy bars. PS. The recipe is on this site twice. The other one says to whisk the eggs and sugar in a separate large bowl. This one says to use a small bowl. USE THE LARGE BOWL. The other one also says to use room temperature eggs. I did that. No idea if it matters. (Now I'm off to make more recipes with that homemade Kahlua!)

Salsa Chicken Rice Casserole

So yummy! I sauteed the onion, reduced the cheese to about 1 1/2 cups, and added cumin, diced chilis and black olive slices. Instead of cream of mushroom soup I used tomato soup. I did mix everything together instead of layering it, too. Lots of tweaks, I know... but it was so yummy. I may add black beans next time. Other than that, my family doesn't want me to change a thing... except maybe only use half an onion. It was very convenient & quick to throw the frozen chicken breasts in water and boil. I may try this in the crock pot next time. My daughter said I must make this very often.

Rempel Family Meatloaf

I've been making this recipe about twice a month for years. The only things I do differently: I use 1 lb. ground beef & 1 lb. ground turkey, I use 1/8 c. ketchup + 1/8 c. BBQ sauce, a Tbsp. Worcestershire, and I only use half the packet of onion soup mix. I also make a ketchup-mustard-brown sugar topping that I pour over the top for the last 15 minutes of cooking. One of my kids accompanies her meatloaf with extra BBQ sauce. This make delicious next-day sandwiches.

Grilled Chicken Salad Sandwich

Easy, delicious and so colorful! A big hit at our house. The only things I did differently were: I used pecan bits instead of cashews, seasoned with a pinch of salt and a dash of paprika at the end, and I added a little pineapple juice to moisten it. My husband thought it was great, but thinks I should add more dried cranberries next time. I've been wanting to make chicken salad for months and I'm so glad I chose this recipe. I'll definitely be making it again and again.

Slow Cooker Stuffing

This was a big hit! I used a box of Classic Stuffing from the grocery store plus most of a loaf of French bread which I cubed and let air dry for two days. I did not use mushrooms but added pork sausage and one diced apple. Delicious! Using the crock pot is the way to go. I uncovered it the last hour and it had just the right amount of moisture and crispness (add broth only as needed, as suggested). I can't wait to make this again. I might add another apple next time, and I want to try adding some cornbread. Thanks so much, Gayle!

Pumpkin Cookies V

These are impossible to resist once you have tasted one. I used half brown sugar and half white sugar and added pumpkin spice, and I dipped the cookies in the icing. My husband said they HAD to be the best thing at the bake sale. The icing is to die for. Reminds me of maple sugar candy. I'm going to make another batch to share on Thanksgiving, but my waist line is begging me not to do it.

Taco Quiche

This turned out great! I was looking for a simple ground-beef dinner idea and found this. Found out I was out of ground beef so I did this: Dumped a can of black beans, a can of kidney beans, a can of corn, and a large can of crushed tomatoes in a pan. I added some leftover white rice and the taco seasoning. Brought it to a boil and then let it simmer for a few minutes. Poured it into a 9x13 pan and poured the Bisquick-egg-milk mixture on top. It was tasty and my family liked it! (My dh added salt, I added Tabasco.) Next time, though, we're making it with a cornbread topping. That sounds perfect. I'll make this again with or without the ground beef!

Ground Beef Stroganoff

I made this with 3/4 can cream of mushroom soup and (to me the best part of stroganoff) a bell pepper. I left out the mayo and mushrooms. This tasted yummy! I would give it 5 stars except for the fact that I did make some changes. I will double this recipe next time for my family of 5. We like leftovers!

Oven Fried Chicken III

Cripsy, moist, and delicious! I didn't have thyme or paprika, but this still tasted wonderful. My family loved it. I cooked thighs placed on a cooling rack on a baking sheet... I still got soggy bottoms, but that didn't take away from our enjoyment at all. I'm so excited to find a chicken recipe that's this simple and so tasty!

Sassy Sausage and Black Bean Soup

Simple and delicious! My husband couldn't stop going back for more. (Will add water today when I reheat some for lunch.) I made this with sweet Italian sausage, which I cooked separately. I used two cans of beans, added a can of corn and served this over rice (with bread on the side). Omitted the cilantro. Otherwise, I followed the recipe exactly. It's nice to find one my husband is so enthusiastic about!

Sloppy Joes II

Our family loves this recipe (I make it a lot). I have to double it for my family of five (makes great leftovers, if there are any). I also add 2-3 tsp of white vinegar, a tsp of Worcestershire sauce, and some tomato paste. Quick, simple, and DEEEELICIOUS!

Easy Lemon Cookies

These came out perfect the first time I made them--crispy on the outside, chewy on the inside! Yum! So quick & easy & delicious, even without any lemon extract. This time, however, I added the lemon extract...and they all BURNED on the bottom! Even when I turned the temperature down to 350. I am going to leave the extract out next time...and start with a cooler oven. I'm not giving up. My children are still raving about the burnt cookies! They're that good.

Last Minute Chicken Dinner

This was a hit with my (young) kids! This is a big deal for me! I had no potatoes, but I made it anyway and served it over egg noodles. Yum! I was disappointed that I couldn't make it with the potatoes, but I don't think the kids would have liked it as well with them! I will definitely make this again (one way or the other)! Thanks!
