full points for health factor. use p.butter instead of oil and you have basically a no sugar (xcept for what is in the fruits and p.butter),no flour, eggfree, butter free and preservative free cookie. i used a lot of nuts- sesame, almond and pnuts for crunch. added coconut essence, chopped apples and prunes, dried cranberries and few raisins. don't forget your cinnamon powder! just pack with your favorite fruit combo. i did reduce the bananas to two so it wasn't as chewy as my first try- i liked it better this time. to add even more crunch add the slivered almonds on top the cookie after you have shaped it, push it in just a bit so they wouldn't fall out. i did find i needed it to cook a little more because they were bigger and i wanted the bananas to carmalize. looking forward to trying new combos!!!!! the kids will love them.
