Fresh Tomato Pie
I made this on a 2 pieces of flat bread. I mixed the onions with a dash of olive oil and put them on the crust while I was browning it. It helped with the crispness of the onions. I also added some baby bella mushrooms to the top. My husband loved it!

Nicole's Winter Carrot Zucchini Bread
This is fantastic! I did one large and 4 mini loafs, the bread is very moist and the taste is fantastic. I did change the flour to 2 1/2 c of unbleached, but that was just because I didn't have any whole wheat and I used 4 small eggs instead of the egg whites. For those who had a problem with density I would suggest using a sifter for the dry ingredients. This is one of the best healthy breads I have ever made.

Sauceless Garden Lasagna
My family loved this dish. I changed it a bit by adding chopped green pepper and used the baby bella's instead of the larger ones. I also put just enough sauce (watered down) to cover the bottom of the pan. Also, I used about 12 tomatoes and added 1/2 cup of regatta cheese to the filling and used the rest for the top. This was a great and easy way to add vegetables to your families diet without having to fight the kids to eat them.
