My first time having Fideo was when I was a teenage (25 yrs ago). I was at my boyfriends house and his mom made this. It was served with a dollop of Cream Cheese. I never knew what it was called until I made this recipe! It was delicious. My family loved it. I will not be sharing the story about when I first had it!

Peanut Butter Vegetable Chicken Soup

This was fun to serve! I was excited to see who would be the first to name the "mystery" ingredient. 6 adults at the table. 4 liked it, 1 did not, and grandma ~ She flat out hated it and said I ruined a perfectly good vegetable soup by adding whatever it was I added. I would make this again, but in a half batch. It reminded me of Thai food and I wished I had some chili flakes to sprinkle on top.

California Grilled Veggie Sandwich

WOW!! What a Sandwich! I doubled the Mayo mixture. Since it was raining today, I broiled the veggies. It took a lot longer using the broiler, but well worth it. This is definitely going to be enjoyed in my house on a regular basis from now on.

Garlic Ginger Tofu

I give it 3 stars due to it being bland. I followed the directions as is and then added extra garlic, ginger, and soy sauce at the end. Once I tippled the garlic, ginger, and tamari, added a pinch of red pepper flakes, I LOVED IT! I also used extra firm Tofu. Served with steamed rice and vegetables.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Delish!!! Couldn't get the pepper Boursin, so I used the Garlic Herb. I added 6 cloves chopped garlic to the mushrooms.

Zesty Lemon Loaf

Made 2 batches today and love the taste and texture. There may be a possible error in the recipe or I am totally misreading it. I can not find where it says to add the ginger. I accidentally left it out of the first batch. The second batch, I added it to the dry mixture. The GINGER is a must! It really adds that extra touch. So 4 stars with no ginger, 5 stars when you add it.
