Pesto Cream Sauce

This is incredible. Very easy to make. I wasn't sure about adding the flour in with the milk. So, I made a roux as I normally would when thickening sauces - I added the flour to the butter, onion, garlic mixture and let it cook for about a minute and then added the milk. Has worked fine both times. The first time I made this with the pesto and it was fantastic. The second time, I didn't add the pesto (as I didn't have any) but based on the ingredients I figured it would taste more like an alfredo sauce without it. Sure enough, it did! Great both ways.

Garlic Shrimp Linguine

Great! Only gave it 4 stars because I added some things. Doubled the sauce, added broccoli and mushrooms as well as some red pepper flakes. I didn't have a problem with the cheese clumping up. Will make again!

Corn Dog Muffins

Excellent! I gave it a 4 because I modified it a bit. First of all, I had corn flour and all-purpose flour on hand so I used the "Amusement Park Cornbread" (with suggested modifications). The only extra step is taking about 1 minute to measure out the flour, corn flour and baking powder. Saves from specially buying a corn muffin mix. I had beef knockwurst on hand and chopped it into 4 pieces and they fit nicely in the muffin pans. These tasted SOOO good. However, as you bite into it, the muffin tends to crumble and you end up eating the hot dog separately. I think next time I will chop the hot dog into small chunks and mix it into the batter. The other thing is I saved out some of the grated cheese and sprinkled it on top of the muffins. It added a nice crunchy, flavorful texture to the muffins!

Amusement Park Cornbread

Excellent! I gave it a 4 because I modified it. I did what others suggested and used 1 & 1/2 cups of flour and 1 & 1/4 cups of cornmeal. I also added a few squirts of agave syrup (it's like honey. I just needed to use it up). It had just enough sweetness and was very moist (I even used 1% milk). I used this recipe for the Corn Dog Muffins recipe on this site.

Chocolate Chip Cookie Dough Cheesecake

Used oreo cookies for the crust. This thing was AWESOME! I made it for my hubby for his first Father's Day. :) He ate 1/4 of it by lunch time! Next time I will double the cookie dough and also will try the ganache topping as recommended by another user.

Crispy Catfish

Grandma VanDoren's White Bread

I made two loaves instead of three. I live in FL so it's a lot more humid here. Because of that, I used 5 cups of flour (3c white, 2c wheat because I ran out of white) and then baked it for 33 mins uncovered. The top got just enough brown and the center was so moist. I will be using this recipe a lot!

Good Old Fashioned Pancakes

Spicy Indian Chicken and Mango Curry

WONDERFUL!! It's so yummy! I misread the directions and accidentally pureed all the mangoes but it still tasted good! I served it with long grain brown rice and used Lite coconut milk for a healthier meal. I also sauteed the chicken and shallots with coconut oil.
