Honey Mustard Tofu

I took the advice of previous reviews, and made the sauce separate from the tofu. I also cut the tofu into smaller pieces. I added a couple of sauteed red peppers, and served it over some green veggies and rice. The flavors are really wonderful.

Chilled Cucumber Yogurt Soup

Tastes amazing, especially on a hot day. I used plain yogurt with fat. Makes for a more filling dinner. I didn't add the raisins. I used my immersion blender. For company, I would probably put very thin slices of cucumber on top of each serving.

Southern Shortcake

This was awesome! I made it non-dairy by making soy buttermilk (adding 1 tsp lemon juice to soymilk). I took the advice of other poster and added a little bit of sugar. I didn't roll them out. Instead, I hand flattened, and cut into shape. Really yummy!

Quinoa Biryani

The flavors just weren't strong enough. The more we ate the more the flavor grew, but it was pretty weak. I'd be tempted to add some other flavor, but I'm not sure what. Also, my potato dice may not have been small enough, but they didn't have enough time to cook before the water was gone.

Turkey and Quinoa Meatloaf

I doubled this recipe, and it was great. We just kept eating it up. I did add a tablespoon of tomato paste to the glaze, and I didn't add any salt.

Thai Cucumber Tomato Salad

This is a really nice cucumber salad variation. I don't care for cilantro, so I substituted parsley. I also used yellow tomatoes and red tomatoes to give it even more color. It was a big hit.

Lamb Chops with Balsamic Reduction

This recipe was a huge hit. The lamb came out so tasty, and the reduction was spot on. I didn't add butter to the reduction, and it was fine. I didn't have shallots, so I substituted with mild onion.

Honey Mustard Chicken with Pretzel Crust

This came out really nicely. It wasn't hard to make, and my husband and MIL really liked it. My husband was the only one who said he would have liked to have used no-salt pretzels. I used about 1/2 the amount of pretzels. I didn't have yellow mustard, so I used spicy mustard as a stand in. Also, I halved the amount of honey for the sauce, otherwise it would have been too sweet for us.

Simple Whole Wheat Bread

This recipe was really easy. I hope to make this a lot more in the future. The reason I gave it four stars was because of the butter/margarine on top of the bread after baking. Our family likes a crunchy top, and this step detracted from the bread for us. I did change three things. 1) I used the rapid rise yeast. This eliminates the first rise. 2)I used 1/3 c. sugar for the second part of the recipe. As one reviewer noted, it's a little cheaper. 3) I used canola oil instead of melted butter. We try to keep all our bread non-dairy, and I don't like margarine.

Chicken Lo Mein

This was pretty easy to do. I accidentally read 1/2 lb of mushrooms for 1/2 cup, but it still worked. Fortunately, I bought more than 1/2 cup. I used the lo mein noodles vs pasta, and I used bs chicken thighs. One mistake I made was to let this sit for a while after it was done. It still tasted great. Eat this right away if you use lo mein noodles.

Nan's Potato and Egg Frittata

Warning: I changed a lot of things. I followed the advice of previous reviewers for a few things. I microwaved the potatoes first and added sauteed onions, and a bit of cheese on top. I also added about a cup of broccoli to make it a complete meal (I feel a meal must have some veggie and potatoes are not veggies for me) and a couple more eggs. I gave it four stars, because flipping via a plate seemed like a bad idea for me. I put in under the broiler for a few minutes to finish it. The cooked potatoes would have had a nice flavor on their own, but adding onions just makes it that much more. The end result was gorgeous and delicious.

German Potato Salad

Easy recipe that tastes amazing. I changed the bacon to pastrami, because we don't eat pork. I also didn't use green onions. Instead, I sauteed an onion until just before tender. Mixed in the flour and then the rest of the ingredients.

Scalloped Potatoes and Onions

This is so easy. I ran the potatoes and the onions through my Cuisenart, which made this a very quick recipe. I doubled the recipe for a dinner party, and the guests really loved these potatoes.

My husband made this for me. He followed the instructions to a "t," and it was just amazing. I did make a gravy, but not using sour cream. Just reduced and then thickened some reserved marinade.

Southern Living magazine's Brunswick Stew

Crab Quiche I

I also added an extra egg and hot sauce. I didn't have green onions, so I sauted a yellow onion and added it to the mix. I used imitation crab meat. Everyone thought this was great.
