English Muffins
I saved this to my recipe box on this site some time ago. Today (Jan. 02/2011) I decided to try and make these and judge these for my self. They are every bit as good as all the reviews have said! So many people are intimidated by using yeast in recipes. I know because I used to be one of those people. Warm water means kitchen sink hot tap water to me now and hot water means it needs to be heated a tad first. I got to this conclusion by testing my hot water temps. Your water heater may be turned up higher then mine so test first. They tasted so fresh and I understand why they say split with fork now after all these years. It's so you don't smoth out all the nooks and crannies (air holes inside) by slicing with a knife. My darling husband was pleasantly surprised! He loves English Muffins and these were excellent. The only change I made was to substitute 2 cups of wheat flour inplace of 2 of the cups of white flour. Thanks for sharing such a simple and practical good recipe that I'll use often now.

Chocolate Eclair Dessert
This is a very popular recipe that I had tried long ago before this post. The reason so many commented on the frosting being too much for this dessert is a common error. Many times when a recipe gets passed on to family and friends they leave something out or is comes with personal amendments. The similar recipe I enjoy calls for you to microwave the canned frosting (IMPORTANT TO REMOVE ALL FOIL FROM INNER SEAL FIRST) for 15 seconds only. Including this important step changes the consistency of the frosting to a glaze. It really makes all the difference in the world. I have never used the whole can of frosting yet, I save unused portion by replacing lid and storing in refrigerator for another use for up to 2 weeks.

Blueberry Sour Cream Coffee Cake
This made a very moist heavy coffee cake, but oh so delicious! I cut back butter to 1+1/2 sticks (3/4 cup) as suggested by others and cut sugar back to 1 cup. Also dusted pecans with flour before adding to cake. Others said they collapsed cake and this old trick from my grandma works fine for that. I did use 2 cups blueberries and a little more cinnamon than suggested. Will make again.
