Chicken Breasts with Balsamic Vinegar and Garlic

What a fantastic recipe! The chicken was tender and so flavourful. The mushrooms really hold that balsamic flavour as well. I left out the flour after reading some of the reviews, but that was the only change I made and it turned out perfectly. I'll definitely be cooking this again.

Stuffed Green Peppers I

Very good base recipe, but I made a few modifications. I cooked the rice in a separate pot while browning the beef, and added it to the mix once it was done. I used herbed diced tomatoes, and I added the cheese to the tops of the peppers instead of mixing it in with the filling. My husband, who doesn't usually like green peppers, told me it was really good, and then licked his plate. The peppers were firm but not undercooked and the filling was flavourful.

Black Beans a la Olla

Delicious! This is my new favourite black bean recipe. It has great depth of flavour. The only change I made was to add more cayenne-we like it hot!

Lasagna Spinach Roll-Ups

This was just okay. My husband and I felt it needed a bit more zip. I used the two packages of spinach but maybe should have included Italian sausage instead of one of the packages of spinach. If I were to make this again I'd use fresh garlic instead of powder as well as fresh basil.

Quick and Yummy Hummus

I made it exactly to recipe and it was pretty good, but I like a bit more garlic and lemon so I ended up adding some after tasting. I think I had five garlic cloves in the finished product and it was fantastic. It's very easy to make.

Quinoa and Black Beans

This was my first time cooking with quinoa and I was very pleased. It has a wonderful flavour. I soaked the quinoa for an hour beforehand and it was a bit mushy, but not too bad. Next time, I will use just one can of beans and add a can of tomatoes to make it less dry.

Indian Peanut Stew

I made it as per recipe, and the peanut butter was far too overpowering and made the dish very dry. Next time I'll cut the peanut butter in half.

Pumpkin Turkey Chili

Delicious! At first I was a bit apprehensive because it looked pretty dry, but it really wasn't. I used ground chicken breast instead of turkey and also chipotle chili powder instead of regular chili powder, so it was quite spicy. Next time, I'll add a can of kidney beans.

Tres Leches (Milk Cake)

Absolutely the best tres leches I've ever had. I didn't add all of the milk because I thought it would be too soggy, I maybe added all but half a cup or so of the milk mixture. I also added strawberries on top for garnish because it looks kinda plain, it needed to be dressed up a bit.

Chicken Stew with Pepper and Pineapple

Not bad. I will probably make this again as my bf enjoyed it more than I did. Next time I will add more liquid and maybe some vinegar to give it more of a sweet and sour taste. I'll also increase the amount of ginger. I didn't make it in the slow cooker, just on the stovetop.

Beef Stew III

Overall we enjoyed this easy to make stew. The only thing it could've used was a bit more spice, maybe a bay leaf or something. I don't know what beefy mushroom soup is so I used a can of beef broth and about a cup of fresh mushrooms. I'll definitely make it again.

Hungarian Noodle Side Dish

Asparagus Quiche

Cheese Lover's Tuna Casserole

Even though I am a cheese lover, this casserole has too much of it. I could have just eaten a block of cheese! Next time I would cut the amount of cheese in half, grate it instead of cubing, and bake it in a 8x8 dish. 9x13 is too big.
