Very good base recipe, but I made a few modifications. I cooked the rice in a separate pot while browning the beef, and added it to the mix once it was done. I used herbed diced tomatoes, and I added the cheese to the tops of the peppers instead of mixing it in with the filling. My husband, who doesn't usually like green peppers, told me it was really good, and then licked his plate. The peppers were firm but not undercooked and the filling was flavourful.
