Warm Spinach and Rice Chicken Salad

My family has enjoyed this recipe for a long time.I usually use Uncle Ben's wild rice mix. I have also added green or purple onion, feta or provolone or mozzarella cheese. This is one of those recipes that you can get really creative with. We love it.

Florentine Stuffed Chicken

Delicious and very pretty dish,easy to prepare but nice enough for company. It is substantial enough that you don't really need pasta, just bread and salad and a glass of wine. I topped mine with a large can of diced tomatoes with basil, garlic & onion.

Chicken Tortilla Soup I

I loved this soup because it is quick to make and so delicious. (I made mine without hominy or oregano.)It's a good recipe for when you can't get to the grocery store, since most of the ingredients can be kept on hand for a quick meal.

Banana Pineapple Delight

I think there is something missing from the filling ingredients. Seems like there should be a dairy product. I cooked it on low heat in a heavy pan and it still scorched like crazy before it even came to a boil. Tasted okay, but I don't think I'll try it again.

Chicken Suiza Cornbread Bake

Great recipe, was a big hit at our potluck lunch at work yesterday. (I made it the night before and reheated it in the microwave, still delicious). I used 1/4 c. butter, 2 eggs, and a small can of green chiles. People who like spicy could very well add jalapenos to this recipe.

Herbed Pork and Apples

I didn't exactly follow the recipe, but used it as a starting point. I put some coarsely chopped onion in the crockpot, used the herb rub on a pork shoulder roast, put it in there with a cup of apple cider and cooked on high 5 hours. Turned out so tender and delicious. I served it with rice and thickened the broth with cornstarch. Yum.

Greek Penne and Chicken

Wonderful recipe and very easy. I did not find it dry at all. Next time I will add the feta (or maybe some pecorino) after assembling since the half melted feta didn't look very appealing. The lemon juice is what makes this recipe special, so don't skimp. I used the juice of 2 lemons.

Corn and Black Bean Salad

I don't like (and don't have) cumin, so made it without and it is scrumptious! I added chopped tomato and squeezed half a lime into it. This is one of those recipes that you can add to and it tastes great because the dressing is so good. I hope I don't eat it all before my main course gets done!

Spinach Chicken Parmesan

Delicious and beautiful dish. I used what I had on hand: pecorino romano, fresh spinach, roasted red peppers (in a jar), fresh garlic and red onion in place of the green onion. Also increased the amount of sauce slightly. I served it with spaghetti tossed with olive oil, garlic and basil, but could have served with plain pasta as there was plenty of sauce. My family loves it.

Roasted Pork Loin

I have made this several times and it is one of my favorite recipes. I love the flavor combination of garlic, rosemary and pork. What you must do with this, as with most roasts, is use a meat thermometer and cook to a temp of 160. I made this one time (without sauce), sliced it and took to a potluck and everyone loved it. The meat is so moist and good it stands without sauce.

Mexican Rice II

We loved this rice, although it needed more broth than the recipe called for. I stirred in a can of Mexicorn after the rice had cooked and it was delicious.

Baked Honey Mustard Chicken

I wasn't sure I would like this since I don't like mustard, but it was delicious. I love recipes that are quick, easy, and use ingredients that I have on hand. I served with rice and green beans almondine. Yum.

Holiday Chicken Salad

I love this recipe. I usually make it with turkey breast. It tastes better after it sits awhile, however, I always manage to eat some as soon as it's made! I have even enjoyed leftovers for breakfast the next day.
