Mexican Quinoa

This is very similar to the Mexican rice recipe I use. I did not use taco seasoning, but added some garlic salt and ground cumin to the onion and quinoa mixture. Good side dish with rotisserie chicken. I'm learning to eat gluten free, so looking for recipes that use other grains. This is a keeper.

Roasted Apples and Brussels Sprouts

Skillet Chops with Mushroom Gravy

I deglazed the pan with a little ( 1/2 cup) white wine before adding the soup and milk. I used 1 cup of milk, and added some black pepper. Turned out delicious. Served with egg noodles and sweet corn. Good meal and simple.

Rhubarb and Strawberry Pie

Great recipe. I let it cool overnight and ate it the following evening, not runny at all. I made it with a crumb topping (1 c flour, 1/2 c brown sugar, 1/2 c butter)and it's absolutely delicious. Not too tart nor too sweet.

Cranberry Salad VII

I have made this 3 times now, it is so fresh and delicious and beautiful. I omit the celery and grate about a tsp of orange zest. I use the whole peeled orange and chop it up in the food processor. I use the food processor to chop all the fruits and nuts, being careful to not overdo it and turn it into applesauce! If using a jello mold or bundt pan, dip the mold in warm water for about 15 seconds to loosen the jello from the pan before inverting it onto serving plate.

Cranberry Salad II

Great recipe, and very adaptable. I left out the celery and used apples instead of pineapple. Used my food processor to chop everything, made it quick and easy. Everybody loved it at Thanksgiving, so I've made it again for a Christmas party. I used 6 oz package of raspberry jello to make it set up better.

Baked Pork Chops I

French Toast Casserole

Excellent dish. I substituted 1/2 c eggnog for some of the milk and made it for Christmas brunch. It was easy, delicious and looked beautiful as it came out of the oven all puffed up and golden. I cooked it in a cast iron skillet.

Italian Breaded Pork Chops

If you use boneless pork chops and pound them thin, you don't need to bake them, and they come out fork tender. I used some garlic salt instead of the garlic cloves. Excellent recipe.

Angie's Dad's Best Cabbage Coleslaw

I substituted Splenda for the sugar without any problem. I also decreased the oil a little bit this time to save some calories. Everyone in my family loves this recipe, even though they hate mayonnaise based coleslaw.

Corn and Crab Cakes

I was very disappointed. I ended up adding A LOT of breadcrumbs and the patties still didn't hold together well. Plus they were not very flavorful. I may try again and add an egg, cracker crumbs, more seasoning of some type.

Famous Pork Chops

Easy and delicious, what could be better? I used thin cut boneless chopped, which were done in about 30 min. I did not cover with foil and they were nicely browned but not dry at all. My husband is not a fan of pork but he liked these a lot.

Feta Tomato-Basil Fish

I seeded a large, fresh tomato & used extra garlic. I put some of the mixture on the fish, reserved the rest to toss with spaghetti for a side dish. Also, used Romano instead of Feta. Delicious.
