Grilled Sausage with Potatoes and Green Beans

This will be in our regular rotation this summer. Needed something quick on the grill and this was perfect. The only slight negative was that the green beans got a little overdone by the time the potatoes and sausage were done. Next time, I'll cut the potatoes and sausage into slightly smaller pieces so everything gets done at the same time nicely. Took one reveiwer's suggestion and mixed the potatoes, green beans and onions with a (very) little bit of Italian dressing. Then layered the potatoes, sausages on top of those, then green beans and onions and then sprinkled a little bit of fresh garlic over all before sealing. I realized after we have devoured everything that I forgot the butter, but we didn't miss it!

Granola Bars II

This recipe was truly amazing! It was very buttery, though, and it would soften if it got too warm- but if you refrigerate it, its stays firm. That is all because of the butter! I added chocolate chips and cranberries- haf cup each- and cut the recipe in half. I also popped it in the oven for 10 minutes, then took it out, and then cut into squares and it was back in the oven for 6 minutes. Next, I let it cool for 25 minutes and put it in the refrigerator- and they were perfect! This is a great base recipe. :)

Grilled Chipotle Sweet Potatoes

I made it exactly as the recipe specified, but thought it was just okay. I would recommend basting the potatoes with the oil/spice mixture during cooking which may help. As one reviewer said, they got a little dry and the cinnamon flavor overwhelmed the other spices, I felt.

Paleo Slow Cooker Pork Loin

The meat was tender, but we felt like the curry was just overpowering. I won't be making this again. If you love curry, though, you'll love this.

Tomato Pork Loin Chops

I thought this was recipe was okay, but not great. I cut the chili powder down to 1/4 teaspoon and it still was spicy. I did coat the pork with the spice mixture which seemed good, but I don't think I'll make this again.

Pork Butt Roast with Vegetables

Made this last night and it is a definite hit. I made it with a pork roast (which I don't think is the same as a pork butt) because Whole Foods had them on sale. The roast was just under 3 lbs. I used some of the advice from other reviews and made the following changes: 1. sprinkled with coarse sea salt, pepper, garlic powder & Mrs. Dash's herb blend before browning 2. added coarsely chopped celery to pan with onion and vegetable stock 3. roasted in 300 degree oven, covered for 1 1/2 hrs., uncovered for last 1 hr. 4. didn't have red potatoes, so just made some mashed potatoes w/ it Perfectly done, sauce made a great gravy for the mashed potatoes too. This is going to be a regular recipe in our house and will probably try it in the slow-cooker next time.

Quinoa with Veggies

I made this for a quick lunch for my mother-in-law Everyone loved it, even my mother-in-law who is not an adventurous eater. I did make some changes though. I used up some homemade chicken broth instead of straight water, sauteed onion and garlic before adding the corn which was leftover from the farmer's market. I forgot to add the cumin but it was good without it. I did squeeze a little bit of lemon over it all at the end with a final drizzle of olive oil. Yum.

Grilled Shrimp Rice Noodle Bowl

My (picky) husband rated this a 9 out of 10, my 11 yr. old who is usually not picky asked me to refrain from making it again. I thought it was very good and quick which is especially important on a hot night. It is definitely too hot to be in the kitchen long and I wasn't with this recipe. I did make a few changes: lightly brushed the shrimp with the dressing before grilling, grated the ginger on my Zyliss before adding to the sauce and did not boil the cabbage. (Boiled cabbage?-blech.) After I drained the noodles, I put them over the shredded cabbage then topped with the grilled shrimp, then topped with shredded carrots and chopped sugar snap peas. Really delicious and healthy. I do have to say that the ginger made the dressing. Those who thought it was blah may not have added the ginger.

Spicy Sausage and Rice Casserole

This was okay, but I didn't feel like it was stellar. It was nice that it was economical and simple, but a few adjustments are definitely needed. For one thing, the 1 teaspoon of cayenne has to be a typo! I used just half teaspoon after reading a few reviews and even that was too spicy. I would recommend an 1/8th. Also, I parboiled the rice for 8 minutes in the microwave with chicken stock first which really cut down on the cook time. It only needed to be in the oven for 35 mins done this way. Also, like other reviewers, I kept mine in an oven-proof skillet instead of transferring to another dish--much less clean up.
