Slow Cooker Coconut Curry Chicken

Best slow cooker recipe I have ever found! Usually I hate using slow cookers because they never come out the same as if I cooked it traditionally. I made this exactly to the recipe and served it over jasmine rice. My whole family loved it, including my kids ages 6 and 8. This one is definitely a keeper and will come in handy for those busy afternoons!

Brown Spanish Rice

This was great for a base recipe and very similar to my white rice version. I followed the instructions the first time and it seemed a little bland. Next time, I will combine my two recipes and add 1 t. chili powder, 1 t. cumin, and a little more salt (approx. 1/2 t.).

Thanksgiving Leftovers Stuffed Shells

Great change from my usual leftover Thanksgiving meals. Had some leftover shells like everyone else. I managed to stuff 30. Also keep in mind that this dish is only as good as the leftovers so those who thought it was bland probably had a bland Thanksgiving too. Mine was delicious!!!

Breakfast Casserole II

I couldn't find potato crowns (flatter, larger diameter) so I used tater tots (longer, narrower) which are the basically the same thing. My casserole baked for the full 50 min, plus additional 10 for melting the cheese. I did not thaw the tater tots and it turned out perfect. Now that I have "tested" the recipe, I will most likely add onion, garlic, and bell pepper while browning the sausage and will probably have to extend the cooking time by 5 min. since onions and peppers have a lot of water in them. I will also top with more cheese or add cheese to the mix or both.

"Zuccotto" Cupcakes

Beer Braised Irish Stew and Colcannon

So easy and so delicious! I love the idea of serving the stew over Colcannon instead of putting potatoes in the stew. It made the dish so rich and creamy. I will definitely adding this to my winter recipe repertoire.

Taco Seasoning I

I have recently decided to switch to a healthier lifestyle and have switched from ground beef to ground turkey. In my research for new ground turkey recipes, I came across tacos. I have never made tacos at home, nor have I ever bought packaged taco seasoning since I prefer to make a lot of my food from scratch. I decided to search for a homemade taco seasoning and came across this one. It had lots of reviews and really high ratings so I gave it a chance with my ground turkey. I made a quick black bean and corn salsa while the turkey was browning and dinner was done. Voila! Not only was it delicious, but I think that was the fastest from scratch dinner I've ever made. Thanks!

Oven Fresh Seasoned Potato Wedges

Didn't have the ingredients for my regular oven-roasted potatoes (garlic and fresh rosemary), so I tried this one. It seemed like an awful lot of seasoning for only 2 russets. I doubled the potatoes, olive oil, and salt. Everything else I left the same. I also sprayed my pan with non-stick cooking spray (learned from past experience). My potatoes took a little longer to cook. I stirred them up after 20 minutes, then I just went by appearance. I'm guessing they took about another 10 minutes. Can't wait to try this on sweet potato wedges next!
