Breakfast Casserole II
I couldn't find potato crowns (flatter, larger diameter) so I used tater tots (longer, narrower) which are the basically the same thing. My casserole baked for the full 50 min, plus additional 10 for melting the cheese. I did not thaw the tater tots and it turned out perfect. Now that I have "tested" the recipe, I will most likely add onion, garlic, and bell pepper while browning the sausage and will probably have to extend the cooking time by 5 min. since onions and peppers have a lot of water in them. I will also top with more cheese or add cheese to the mix or both.

Oven Fresh Seasoned Potato Wedges
Didn't have the ingredients for my regular oven-roasted potatoes (garlic and fresh rosemary), so I tried this one. It seemed like an awful lot of seasoning for only 2 russets. I doubled the potatoes, olive oil, and salt. Everything else I left the same. I also sprayed my pan with non-stick cooking spray (learned from past experience). My potatoes took a little longer to cook. I stirred them up after 20 minutes, then I just went by appearance. I'm guessing they took about another 10 minutes. Can't wait to try this on sweet potato wedges next!

Thanksgiving Leftovers Stuffed Shells
Great change from my usual leftover Thanksgiving meals. Had some leftover shells like everyone else. I managed to stuff 30. Also keep in mind that this dish is only as good as the leftovers so those who thought it was bland probably had a bland Thanksgiving too. Mine was delicious!!!
