Butternut and Apple Harvest Soup

Yum! This soup was perfect for a cold winter evening. The apple gives it a bit of tang and makes the flavors of the other vegetables really stand out. It tasted great even without the wine. Next time I will try the suggestion of using a sweet potato rather than a white potato just to make it a little different. Super easy to make and makes the kitchen smell so good when cooking!

Carnation® Caramel Sauce

I made this recipe to layer over cheesecake. I took others' advice and made sure not to stir the sugar mixture while it was boiling. It took about 12-13 minutes to turn an amber color and was darkening quite quickly at the end, so make sure to really keep an eye on it. Also, stir the milk in slowly - it really foamed up! I only ended up adding 1/4 cup butter, but the end result was perfect! It smelled delicious and tasted even better. This recipe is definitely staying in my recipe box!

Black Bean Chili

We liked it, but had to add more cumin, chili powder and jalapenos to get it as spicy as we normally like our chili. We also added some ground hamburger to make it into a meal, so we decided not to puree half of it. I will definitely make it again as the weather gets colder. It's great comfort food - very filling!

Marinade for Chicken

My husband requests this marinade everytime we have chicken! We use boneless skinless breasts, and they always come out flavorful and juicy. We don't always think about marinating the chicken well in advance, but even grilling after only a half hour in the marinade, the chicken turns out beautifully. This recipe is a definite keeper in our recipe box!

Fired Up Southwest Fajitas

Both husband and I enjoyed this recipe! The second time I made thise, I added the juice of 1 lemon, 1 tsp of cumin and 1 tsp of chili powder just to give it an extra kick - it did the trick! I usually just dump everything in a saute pan because it's faster and the marinade makes a great sauce. Great both in whole wheat tortillas and over brown rice.

Grandmother's Buttermilk Cornbread

The recipe is fantastic as written, but after making this recipe a few times I made a few changes. I used Splenda instead of sugar, whole-wheat flour instead of all-purpose, Smart Balance Light instead of butter, and sour skim milk instead of buttermilk. Sounds like a lot of substitutions, but the end result was absolutely delicious, and nearly guilt free! This is the ONLY cornbread recipe that I use, and it comes out wonderful every time.

Chicken In a Tarragon Sauce

Neither my husband nor I enjoyed this dish very much. I only had chicken breasts on hand, so I took the other reviewers' advice and cut them into strips and browned them. I followed the directions to the letter, and even went out and bought fresh tarragon and a nice bottle of sauvignon blanc to use. It smelled delicious while cooking, but it tasted incredibly bland. Maybe I should have added more garlic or tarragon? The only thing that saved this dish was drinking the left-over wine. I won't be making this again.

Mexican Chicken

I added a few cloves of fresh garlic to the chicken while sauteeing it, then a bit more while sauteeing the vegetables (husband loves garlic!). I also added an extra teaspoon of hot sauce to make the dish a little spicier. I took the previous reviewers' advice and served over hot brown rice. My husband has requested that I make this again!

Pumpkin Flax Quickbread

Both my husband and I love this bread! We made a few changes, but it's fantastic as it is. We substituted 1 cup of splenda for a cup of the sugar and used a total of one cup of whole wheat flour (non-pastry) and 2/3 cup all purpose flour. We also added half of a cup of raisins and extra spices since we love cinnamon and nutmeg. Super fast and easy to make - perfect for the holidays.

Balsamic Green Bean Salad

Yum! Both my husband and I love this recipe! It's simple to prepare and tastes even better the longer you let it sit in the fridge. The one thing we've changed is to only use half of the olive oil, since we love the taste of the vinegar with the garlic and shallots and that much oil isn't really needed. This is perfect with Honey Mustard Grilled Chicken by Connie, also on this site, and oven roasted red potatoes.

Honey Mustard Grilled Chicken

This is the absolute best honey mustard my husband or I have ever tried. We followed the recipe to the letter (using A1 as our steak sauce - our favorite) and cooked our chicken on an indoor grill pan. There was plenty of sauce left for basting and drizzling over the chicken once it was done cooking. My husband ate all the chicken I made, even the pieces intended for leftovers the next day. This recipe is definitely a keeper in our house!

Vegan Split Pea Soup I

Excellent! I did as the other posters suggested and put in more water - about 10 cups total. I also used chicken bouillon cubes in place of salt, which gave the soup a wonderful flavor. My fiance is still raving about it!

Margarita Chicken II

I'm not sure if I was me or the recipe, but I was not very impressed with this dish. I even squeezed the limes myself, but the sauce tasted funny to me for some reason. My boyfriend liked it so I may make it again and try adding things (like more honey).

Chicken and Red Wine Sauce

The dish ended up turning out really well, but I made too many adjustments to give it 5 stars. First I cut the chicken into small pieces and coated them with pepper, paprika and granulated garlic. I put in more wine than suggested (because I wanted to use the rest of my bottle) and I'd definitely use a dry wine - pinot noir is not the best for this dish! I also added cornstarch to thicken the sauce and sliced in some onion rings for more flavor. It didn't taste exactly right so I added some soy sauce and BAM! Instantly tasty. I'll definitely make it again.

Downeast Maine Pumpkin Bread

This bread was very dense and full of flavor! I made a couple of changes by reducing the oil to a half of a cup, and adding a cup of raisins, a cup of walnuts, and more cinnamon and nutmeg. The bread was a big hit with my roommates who aren't big on pumpkin, and my boyfriend finished a whole loaf by himself!! I'll definitely make this again.

Sweet and Sour Sauce I

I took the advice from other reviewers and added pineapple juice instead of water, and used half brown sugar/half white. I also added a can of pineapple (cut in chunks) which gave the sauce a really great flavor! The texture was perfect, and it tasted great with chicken and rice.

Best Easy Chicken Croquettes

I made these with canned chicken - very quick and pretty good. I didn't really care for the texture all that much, but it was probably the chicken. My boyfriend loved them though, so I'll definitely make them again.

Deviled Eggs

I love how easy to prepare these are! In addition to the mustard and a little extra mayo, I also added some chili powder and worchestire sauce for some extra flavor. I like my filling light, fluffy and yummy - thanks for the recipe!

Oatmeal Chocolate Chip Cookies IV

I love the texture of these cookies!!! Although, I added a TON more chocolate chips than it called for (maybe about 1.5 or 2 cups total) because my roommates are all about the chocolate. I guess it's not really that low fat with all that chocolate, but they sure were tasty!!! Thanks for the great recipe Allison!

Easy Chicken Rice Casserole

Really good and basic; I also made some changes to the recipe. I only used 3 chicken breasts instead of 6, and instead of adding 2 cans of cream of chicken soup, I substituted one of the cans for cream of mushroom instead. I only used 1 cup of milk instead of 2, and added some paprika, chili powder (we like it kind of spicy) and garlic. Instead of baking it for 90 minutes, we only put it in for 60 and it turned out just great. Thanks for the great recipe!
