Eggplant and Ground Beef Lasagna

I have made lasagne many times but this is the first time I added eggplant. I made the recipe exactly as written and this was delicious.

Stuffed Mexican Peppers

These were good. I used 8 ounces of ground beef and one cup of rice. Also added some chili verde salsa. The mixture filled four large pepper halves - I used red bells. I softened the peppers in the microwave in a covered pyrex dish for four minutes and they were perfect.

BBQ Pork for Sandwiches

This was great. The only thing we did different was to coat the buns with the barbeque sauce and not the meat. The natural flavors are delicious and less sodium

Day Before Pay Day Fried Rice

Great!! The only change I made was to use 2 eggs and 1/4 cup egg beaters. I cooked the eggs into thin omelets and cut them into ribbons. Also added a little seasame oil before serving.

New England Crab Cakes

These were great!!! I followed the recipe but did not pan fry. I brushed the top of each cake with melted butter and than cooked them in a 375 degree oven for a total of 16 minutes. So good......thank you Jenna for posting.

Family Favorite Chicken Lo Mein

I was surprised as to how well this turned out. I used hoisen sauce instead of black bean sauce,6 oz of pasta, 1/2 to 3/4 pasta water instead of the cornstarch, no broth, added shredded cabage, chopped onions and garlic.

World's Best Lasagna

This was delicious. A little time consuming but well worth it. I made a three layer lasagna and only used italian sausage. Also added more mozarella cheese (shredded) and ricotta. I made this for Christmas Eve and served t with Lentil soup for starter and also homemade meatballs and extra sauce. Thanks John.

Buttery Rolls

Delicious - made exactly as written except used margarine instead of butter (less saturated fat) - was concerned with the rolls not rising - trust the recipe - the rolls rise in the oven...

Lucky's Gazpacho

Lucky, thank you for this wonderful recipe. I made this the day before I served it My hubbby raved about the flavors. We had this with grilled cheese sandwiches. Will definetly make this again using the cucumbers and tomatoes from our garden.

Penne with Spicy Vodka Tomato Cream Sauce

Chicken Enchilada Casserole II

Excellent - used 4 frozen chicken breasts cooked in the Crockpot for 5 hours. Then shredded the chicken and added a little cumin and a lot of onion powder. Then I combined 8 ounces of light sour cream, 16 oz medium picante sauce, 1 8 oz bag low fat cheese and 2/3 of an 8 oz bag of regular cheddar cheese, 1 can of healthy Campbell’s cream of celery soup, 1 can of Bush's canned chili beans drained. Instead of the flour tortillas I used 12 6" corn tortillas cut in strips and made 3 layers. Cooked covered 40 minutes at 350 degrees. Then cooled 15 min before cutting. Topped with sour cream and jarred chopped jalapenos. This tasted just like chicken enchiladas without all the work. Will definitely make again.

Asian Lettuce Wraps

I have had this saved in my recipe box forever and finally made it. What a treat. Since we don't like water chestnuts I added 3 stalks of sliced celery. The flavors were amazing. I served it with steamed white rice.

Egg Foo Young

We really enjoyed this. I used 3 eggs and 1/2 cup of egg whites. Next time I will add more bean sprouts. I also used jarred chicken gravey with light soy sauce. Served with white rice and egg rolls. Thanks Sal!

Vegetable Couscous

My hubby is not a lover of couscous but after making it using this recipe he could not stop raving about how good it was. With the exception of the zucchini, I followed the recipe exactly. I also used tri-colored couscous which made for a very pretty dish. I will certainly make this again.

This is one of the best soups I have made and believe me I have made many. The only change I made was to use beef broth (personnel preference) and add more water as we like a brothy soup. I also used a 28 ounce can of crushed tomatoes instead of the tomato sauce. This gave the soup a slightly sweet taste which my husband loved. Also substituted garbanzo beans for the green beans (again personnel preference). This made a ton of soup, enough for my huband's lunch and also enough for another meal or two.
