Busy Day Chicken Rice Casserole

Reviewed: Apr. 26, 2012
This is really easy to make but a little bland and can be healthier. The first time the rice was overcooked. I mixed in about a 1/2c of fat free sour cream which helped the rice, and used fat free soups. Used brown rice. We dont like mushrooms so I didnt add them. Little extra garlic powder, onion powder, & pinch of Old Bay in soup mix. I kinda pile up the Liptons onion soup mix on top of just the chicken. It makes a yummy crusty top of the chicken and doesnt make the rice too salty.

Garlic Mashed Red Potatoes

Love these! So easy to make. We love garlic so I added a few more garlic gloves. Doubled the parmesian and added garlic powder, onion powder, pepper.

Easy Baked Tilapia

Reviewed: Apr. 26, 2012
This was delicious and nutritious! Not much of a fish person but this was great. I got a bag of broccoli/cauliflower and a bag of red peppers/green peppers/onions. I also sprinkled the Old Bay and some Smart Balance butter over the veggies so they didnt need salt. Its a very light dinner for the guys, even with the vegetables so I made some brown rice w/ quinoa to go with it.

Quick and Easy Spinach Bread

Reviewed: Apr. 26, 2012
Very good! Was a bit of a challenge to roll together. The first one looked terrible but the second one looked presentable. I would try this one first before taking to a party, just in case.

Amazing Crusted Chicken

Reviewed: Apr. 26, 2012
Delicious and easy to make. I did not have the sesame seeds but it didnt matter. I've never used mayo like this before and it scared my husband to try it because he hates mayo but it kept the chicken very moist and tasted great. I threw into the breading mixture some garlic and onion powder, some Old Bay, and Mrs. Dash Table blend. Doesnt need salt. This dish is in the regular mix now!

Baked Paprika-Parmesan Chicken

Reviewed: Apr. 26, 2012
The recipe is great as is! My husband and I love it and its quick and easy for me to make. The amount of butter seemed like alot but i used Smart Balance butter which works just as well and low fat parmesian. Paired with mashed potatoes for the extra butter "gravy" in the bottom of the pan.
