Pan-Fried Asparagus

I prepared one package of asparagus, snapping off the ends to trim down. I followed all directions as written and at the end, when they were bright green and just firm/soft I turned the heat up for a minute to high to brown them. Don't turn your back if you do this! They will burn very quickly. When serving, I sprinkled them with shaved fresh parmesan.

Chicken Pot Pie IX

I made this last night for my family, and they raved about it! I did not change anything about the recipe, and followed it exactly. Everyone said it was amazing and went back for seconds. I have a severe poultry allergy, so was not able to enjoy it myself, but it DID look and smell incredible... Thanks for a great recipe!

Garbanzo Bean Chocolate Cake (Gluten Free!)

This was delicious! I added coconut to my batter, and then topped the cake with whipped cream, more coconut, fresh strawberries, and pecans. Insanely delicous! I did increase the baking powder by a smidge because mine was expired, and I wasn't too sure how well it would work. Ridiculously good!

Grilled Fish Tacos with Chipotle-Lime Dressing

This was an outstanding fish taco! I used Key Limes for the lime zest and juice so it was a little more labor-intensive. I also halved the Adobo Sauce... maybe even a little less than that. Instead of tilapia I used Snook, and after I marinated it (only able to marinate for about an hour and a half instead of the six in the recipe), I shook the fish off and dropped the chunks into a tempura batter and deep fried it. I also backed off a little on the Old Bay for the Sauce, and only used half what was called for. I used sliced Napa Cabbage instead of regular cabbage as it has a lovely flavor which really lends itself to the tacos! After all the lime preparation, thank goodness I have leftovers for tomorrow!
