Butternut Squash Risotto

Surprisingly creamy. great, actually. Next time, when I'm sauteing the onion, I'll add some diced prosciutto. Also, this recipe serves no more than 4...and you'd have to stretch it to feed 4. I also roasted the butternut squash ahead of time, and then just mashed it in (cold out of the fridge), which worked well. My 11-month old ate it and seemed to like it too!

Quinoa Tabbouleh

super tasty, but needs salt. wash quinoa before boiling it. Added crumbled feta and sweet corn...could switch parsley to cilantro for a southwestern feel.

Healthier Soft Oatmeal Cookies

I used "egg beaters" instead of the eggs. I also used "Smart Balance" 50/50 omega spread in place of butter. I used 1 c dark chocolate chips instead of the dates. And I didn't chill the dough, just dropped them by tablespoonful on the cookie sheet and didn't press them down. Baked them 8 minutes. They were absolutely great. Next time, I'll sub some of the butter for unsweetened applesauce, as others have suggested.

Homemade Black Bean Veggie Burgers

Pretty good. Recipe makes 6 burgers. Drain and rinse the beans first. I think some fresh cilantro would probably be good.

Cream Cheese Pumpkin Muffins

This is a dense muffin recipe; if you want them to be lighter, then dilute the canned pumpkin before using it (1 part water to 2 parts pumpkin) or use fresh pumpkin (cooked & pureed) which has more water content. The recipe made way too much filling, and the filling is thin compared to the heavy muffin batter, so assembly is a bit tricky. I used a whole can of pumpkin (15 oz) which is a bit more than 1 cup. Also I used 1 cup of whole wheat flour + 1 1/4 cup of white flour. Next time, I'll cut the amount of sugar down to 1 to 1 1/4 cups. I added a Tablespoon of sugar to the filling. I also will cut down the amount of oil. 33 minutes to bake, and I made 17 muffins.

Chicken Marsala

Use less butter. Also, add salt to the flour mixture. Really brown that chicken, get it crispy. I couldn't get marsala wine, and so just used a bottle of red, and it wasn't all that great.
