Healthier Stuffed Peppers

i omitted the meat,used a rice/quinoa blend(costco) by coking 1 cup dry rice/quinoa as directed on pkg.riced about 1/2 head of cauliflower mixed other ingred ingredients in and used 2 tsps italian spice mix

Broccoli Soup

love that this soup has no cream to make it thick and creamy. I used fresh brocolli,2 med peeled potatoes,vegetable no sodium stock and a few florets of riced cauliflower.I not only used the nutmeg but I also put 1 tsp dried thyme in for good measure,omitted salt. I topped with a sprinkling of parmesan cheese...yum

Curried Honey Mustard Chicken

This is one of those OMG recipes...everyone loved it..my husband and 2 sons. I DOUBLE the recipe with the exceptions being I used only 2 tbsp. melted butter combined with grapeseed oil to make a total of 1/3 c; and I used 3tbsp of curry powder. It is great to have the extra sauce for rice or brown rice noodles (which is what I have served with it so far) Tonight I am making regular mashed potatoes and sweet potatoes to try along side this dish. The recommendation to double the amount of curry powder is a good one because it definitely doesn't overpower the overall taste...definitely has a CRAVE factor! Also, I bake longer...about 20 minutes covered and then another 20 uncovered.Excellent with boneless skinless chicken thighs too :)

Pumpkin Pancakes

sooo good! Used the additional pumpkin (about 1/3 c more)as well. Make sure to really oil your griddle well as the first few I made stuck to the non stick griddle I was using so with the next few I used vegetable cooking oil instead of just a light spray with the cooking spray oil

Roasted Beets 'n' Sweets

I made this recipe using beets only as someone else was bringing a sweet potato dish to the Thanksgiving dinner I was going to. I used about 20-30 beets..fresh locally grown candy cane beets.These beets got rave reviews from all who tried them..even some of the kids! would like to try the full recipe with sweet potatoes soon!

Roasted Autumn Root Vegetables

I made this using carrots,turnip,onion and parsnip..it was delish..I did not use the goats cheese this time but will try again in future and try it with the goats cheese. I omitted the beets and did them separately (see beets n sweets recipe also on this website..the beets alone were fantastic!)

I also used 8oz light cream cheese.2/3 c butter,1 tbsp. allspice but only about 2.5 c icing sugar as I don't like it too sweet either.did not add the milk

Spicy Chicken Thai Soup

amazing!It is an almost exact match to my fave thai soup-tom kha pak I substiti uted shrimp and removed them as soon as they were cooked so as to prevent them from becoming rubbery/overcooked.used only 2 tbsp fish sauce and 2cans of light cocnut milk when I added the onion I also added some red and yellow diced peppers and a pinch of red pepper flakes and a tbsp of brown sugar. adding a cup of diced pineapple really makes this soup more awesome! next time i will probably add some slivered carrots when i saute the mushrooms for more veggie oomph :)

Spicy Chipotle Turkey Burgers

i used ground chicken and instead of the chipotle peppers i used a good splash of sriracha chili sauce. also halved the garlic and onion powders and only a couple of turns on the seasalt mill. tres bien!

Philadelphia® Dulce de Leche Cheesecake

this cheesecake is DELICIOUS!!! i used pre made dulce de leche sauce that I found at Costco. I also sprinkled with crushed filberts.It was a hit. Next time I will also put a slice of honey crisp or granny smith apple with each slice.

Butternut Squash Stuffed Shells

This was enjoyed by multi generations-I did change it up better to suit my taste and to decrease the fat content. I used skim milk instead of cream and used a whole goat cheese package(113g) instead. I also took the advice of another reviewer and sprinkled with parmesan before putting the cream/onion sauce over everything and then baking for 15 minutes or so.I also roasted the butternut squash(brushed with melted butter and sprinkled with about a Tbsp brown sugar.In the squash mash I used 5%light cream only.Pepper added to the squash mash too.Didn't use a food processor,just mashed everything in a bowl. My 20 yr old loved it as did my parents.A definite keeper!
