Tiramisu Layer Cake

Reviewed: Feb. 13, 2004
Even though I personally don't like tiramisu (hate coffee- gasp!) I brought this to a dinner party and got rave reviews. The other guests gave it an A+ for presentation and an A for taste. I was told that this does not taste like "traditional" tiramisu but everyone loved it anyway! I didn't change a thing and I thought it was fairly easy to make. Thanks so much for a hit!

Slow Cooker Beef Barley Soup

Reviewed: Feb. 13, 2004
This is great soup! I did take the suggestion of another reviewer and used beef boullion broth in place of the water. Very flavorful and rich. I can't stop eating it and will make it again.

Pumpkin Chocolate Chip Cookies III

Reviewed: Nov. 24, 2007
IF you reduce the amount of chocolate chips and IF one adds more spices (nutmeg, ginger, pumpkin pie spice etc.) these cookies might be good. This recipe, as is, is pretty tasteless, and too much chocolate chips. I don't understand why those that change the recipe then rate it 5 stars?

Pumpkin Cheesecake II

Reviewed: Nov. 24, 2007
WOW! This was awesome and a big hit at Thanksgiving. Even though it is a cheesecake it isn't as heavy as some cheesecakes can be. Just the right amount of pumpkin even for those that normally don't like pumpkin. Very easy to make and you can make it a day or two ahead of time. If you don't have mace you can substitute pumpkin pie spice however I followed this recipe to the letter. Try a water bath while cooking to avoid cracks. Just perfect and I will make it again.

Glazed Meatloaf II

Reviewed: Jan. 8, 2008
I have been making this recipe for a couple of years now and it is a big hit at our house. Even those that don't like meatloaf like this one. Other than doubling the glaze, I don't change a thing. If you like a more sweet and sour taste you will like this. But if you prefer a more tomato tasting meatloaf you probably should look elsewhere.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Oct. 17, 2008
I don't even normally like pork nor soy sauce (made it mostly for my hubby) but this was absolutely fantastic! So easy too. The tenderloin just fell apart and the au jus over potatoes was very tasty. I would caution not to overcook this as it might get too dry. I changed nothing in the recipe and will make again and again. Thanks for changing my mind about pork and this great recipe.

Amazing Italian Lemon Butter Chicken

Reviewed: May 27, 2011
I am eating low-carb and was looking for something new. This recipe was delicious. Bursting with yummy flavos. I doubled the sauce recipe with the exception of the butter (kept that at the single recipe amt.) just because that was all the butter I had on hand but it really was fine that way. And also used chicken broth in lieu of wine (carbs). Otherwise kept it all the same recipe. Loved the lemony-butteryness of this with the tang of capers and artichokes and the smoke of bacon! Put it on low-carb spaghetti pasta with a salad. Picky (but skinny) husband liked it too This will be a new favorite!

Green Tomato Cake

Reviewed: Oct. 26, 2011
Just made 3 of these (I had a lot of green tomatoes!). This is delicious! I did throw the tomatoes in the food processer, after dicing, seeds, skins and all. Other than that I followed the directions exactly. However, I found that the cakes that I put in nonstick pans cooked much faster and one was a little dry. The next one in such a pan I took out sooner than the recommended 40 minutes and it was fine. So if you are using a nonstick pan check after about 30 minutes. It doesn't need a frosting at all but I put a cream cheese frosting on anyway. Either way it's very good! Thank you for a fabulous way to use up my green tomatoes!

Mushroom Chicken Piccata

Reviewed: Nov. 26, 2012
Chicken: Flour, egg, flour again and then chilled before frying. I also first sauted the chicken and onion, transfered chicken to oven to keep warm and then made the sauce in the pan. I also doubled the sauce, although I didn't double the wine. Had to use jarred mushrooms which I didn't saute but just put into the sauce. Added capers also. Served with buttery, lemon pepper fettuccine. With these changes, very good. Really liked the sauce.
