Mushroom Chicken Piccata
Chicken: Flour, egg, flour again and then chilled before frying. I also first sauted the chicken and onion, transfered chicken to oven to keep warm and then made the sauce in the pan. I also doubled the sauce, although I didn't double the wine. Had to use jarred mushrooms which I didn't saute but just put into the sauce. Added capers also. Served with buttery, lemon pepper fettuccine. With these changes, very good. Really liked the sauce.

Green Tomato Cake
Just made 3 of these (I had a lot of green tomatoes!). This is delicious! I did throw the tomatoes in the food processer, after dicing, seeds, skins and all. Other than that I followed the directions exactly. However, I found that the cakes that I put in nonstick pans cooked much faster and one was a little dry. The next one in such a pan I took out sooner than the recommended 40 minutes and it was fine. So if you are using a nonstick pan check after about 30 minutes. It doesn't need a frosting at all but I put a cream cheese frosting on anyway. Either way it's very good! Thank you for a fabulous way to use up my green tomatoes!

Amazing Italian Lemon Butter Chicken
I am eating low-carb and was looking for something new. This recipe was delicious. Bursting with yummy flavos. I doubled the sauce recipe with the exception of the butter (kept that at the single recipe amt.) just because that was all the butter I had on hand but it really was fine that way. And also used chicken broth in lieu of wine (carbs). Otherwise kept it all the same recipe. Loved the lemony-butteryness of this with the tang of capers and artichokes and the smoke of bacon! Put it on low-carb spaghetti pasta with a salad. Picky (but skinny) husband liked it too This will be a new favorite!
