Chocolate Cupcakes

I think these cupcakes turned out great. They smell wonderful and the texture is unbelievably smooth. I halved the recipe and followed the reviews that said to add less milk. I found that I needed a bit more milk for a smoother consistency so I added it about 4 tbsp at a time until I was happy with it. They definietly do puff quite a bit in the oven but I think that's fine; the texture is beautiful and moist!

Apple Spice Cake with Maple Cream Frosting and Caramel

This cake has a lovely presentation if you can work out how to piece it together. I made the caramel and cake pops ahead of time and just drizzled it over the top and arrange the cake pops in a circle. I had a bit of extra frosting so I put it in a ziplock bag and piped little designs around the edge and towards the center of the cake. This is the most successful layer cake I've ever made! If I can do it, anyone can. I'm sure my mum is gonna like this cake for her birthday :)

Cinnamon-Carrot Muffins

These muffins go so great with margarine. They're the perfect brunch recipe or breakfast recipe. To add a little crunch, I sprinkled on a few blanched sliced almonds just before putting them into the oven. When they came out, the almonds were toasted to perfection and the muffins smelled divine! This recipe's a keeper, and it's healthy too.

Strawberry Cheesecake

This turned out great! It tasted just like store-bought cheesecake, maybe even better! I couldn't get the sauce to the right consistency to be able to make a swirl pattern on the top :( but instead I decorated the top with almonds! (Which went perfectly with the pink tint). Mine didn't crack at all because of the waterbath. Overall, a great recipe!

Cranberry Pistachio Biscotti

I actually think these are really good-- and SO easy ! They look lovely in a jar; as a gift. The only reason it didn't get 4 stars for me was because I was hoping it would be a bit crispier; I also didn't have any almond extract so that could be why it was more bland than I thought it would be. Overall though, an amazing recipe! I'm keeping this one in my booklet.
