Southwest Chicken

This was a 5 star hit at my table. Both of my boys and husband gobbled it right down. I altered it slightly by cubing the chicken breast and tossing it with a drizzle of extra virgin olive oil, some chili powder, garlic powder, onion powder and cumin before cooking. I also added an additional chili powder and cumin in with the tomatoes. I held off on adding the black beans until the last 10 minutes of cooking and served it over whole grain brown rice. Empty plates and NO leftovers!YUMMY and thank you for the recipe!

Chicken Cacciatore

Yummy! My family enjoyed this dish. I added 2 cloves of minced garlic in with the veggies instead of using garlic powder. I also used a can of fire roasted tomatoes in place of the stewed because that is what I had in the pantry. I also added an additional 1/2 tsp. basil ,1/4 tsp rosemary, and a bit of crushed red pepper (we like spicy)Thanks for the recipe..it is now one of our go-to meals.

Make-Ahead Mashed Potatoes

What a great alternative to frenzied potato mashing as your trying to get the rest of the food on for Thanksgiving. I followed another reviewers advice and reheated in my crock pot to save on oven space. I ended up putting them in too early, woops, next time I think they will only need about 2 1/2 hours on low...don't forget to stir. I omitted the onion salt and sauted a minced shallot and clove of garlic in a couple Tbsp. butter and added that and 1 tsp. salt to the potatoes instead. YUM! Thanks for making Thanksgiving dinner a little easier!

Grilled Tilapia with Mango Salsa

My family really enjoyed this recipe. The second time I made it I substituted thinly sliced chicken cutlets in place of the tilapia just because I had chicken on hand. It was equally as delicous. Thank you for the recipe.

Super-Simple, Super-Spicy Mongolian Beef

Loved this recipe, thank you! I used less red pepper flakes (only a tsp.)& sliced sirloin for my own personal preference. I wasn't sure if I was suppose to stir fry the beef right in the sauce so I opted to remove it from the marinade/sauce with a slotted spoon first, stir fry, then add sauce. Threw in snap peas, onions and red pepper..yum!

Bow Ties with Sausage, Tomatoes and Cream

I LOVED this dish! I followed the recipe exactly with only one exception. Unfortunately I am counting calories so I substituted the yummy heavy cream that I SO wanted to use for hood fat free simply smart half and half. Guess what..It was still delicous! I can't wait to make this one again. Thank you for the great recipe.

Slow Cooker Chicken Taco Soup

This was a HUGE hit at my table!! We gobbled it right down. I used the home made version of taco seasoning as suggested by the recipe's author in the reviews. I used 1 can of healthy request cream of chicken soup + 1/2 can reduced sodium fat free chicken broth in place of the beer (didn't have any)..I can't wait to make this again

Spinach Stuffed Chicken Breast

My family enjoyed this. Thank you for the recipe..it's tasty! I didn't have any pepper jack cheese so I substituted swiss and threw in a pinch of nutmeg for good measure. I also par-cooked the bacon as suggested...I will definitely make it again

Spinach and Tortellini Salad

This is my new favorite pasta salad. I have brought it to a few potlucks and am always asked for the recipe. I prefer to use fresh baby spinach and I've thrown in some chopped genoa salami a couple of times. This is a great recipe!

Zesty Slow Cooker Chicken Barbecue

One word YUMMY!!! Next time I may cut down on the brown sugar ONLY because my kids said it was too sweet(I should mention they are extremely picky eaters)My husband and I both ate seconds and then made sandwiches the next day with the leftovers. I used sweet baby rays bbq sauce and good seasons italian dressing made with balsamic vinegar. After cooking on low for about 4 1/2 hours I shredded the chicken and continued to cook for an additional 2 1/2 hours. At that point the sauce was nicely thickened and caramalized. I can't wait to make this again!Thanks for the recipe

Savory Spinach Casserole

This was great. I did increase the parmesean cheese to 1/2 cup and melted the cream cheese in the microwave as suggested by other reviewers. I also sprinkled the top with some grated gruyer cheese and it was a big hit.I will definitely make this one again and again and again......

Banana Banana Strawberry Smoothie

This was really yummy. I made it first as written minus the extract which I didn't have and replaced with a few sliced strawberries. The second time I used only 4 oz. yogurt, omitted the extract & sugar and replaced milk some crushed ice and about 1/3 cup of blueberry/acai juice..my new favorite breakfast. Thanks for the recipe!
