QUICK AND EASY LEMON LOAF

I took this out of the oven a little over an hour ago, and there is only one small piece left. I've tried several lemon bread recipes that didn't work out due to bad flavor and/or texture. This one did work out and my search is finally over. I used butter flavored Crisco. I added the zest of one lemon plus about a teaspoon of juice in the batter. I had to use original flavored almond milk in place of milk because I didn't know the kids used up the rest of our milk at breakfast. It sounds wrong, but it worked fine and there was no detectable almond flavor from it. Also, I baked this in a glass 11x7 baking dish for exactly 38 minutes and it was perfect. The lemon flavor in this is exactly what we have been looking for. We all went crazy over this. Thank you. This should be kitchen approved.

Honey Mustard Chicken with Pretzel Crust

I made this for dinner last night. I'm giving it five stars because with the sauce that goes on top, it's five stars. The sauce is delicious. I tried a bite without the sauce and it was bland. I couldn't taste the mustard mixture that it was dipped in at all, and there was no "pretzel" taste whatsoever. It tasted like basic, breaded chicken. It's crispy when it comes out of the oven, but after it sits, it loses its crunch. I will definitely make this again, but I might not bother with the pretzel coating. I will probably use the mustard mixture to dip in in before breading it again (even though we couldn't taste it) because it did a good job securing the coating.

Octodogs

I've been making these for 12 years since I first saw the recipe in the TOH May/June 2001 issue (a LONG time ago lol). The only difference is I don't cut them in half and I serve them on top of ramen noodles that have been colored with a drop of green food coloring. The recipe in the magazine was called, 'Octopus and Seaweed'. My kids love this!

Easy Stuffed Zucchini

I also think the measurements are off. There was enough filling for 5-6 good sized zucchini. My daughter loved these and wants me to make them again.

Grilled Fish Tacos with Chipotle-Lime Dressing

These were fantastic. I followed the marinade exactly, but after reading many reviews, I halved the lime juice in the sauce and left out the zest. Also, I believe it must be a misprint with the amount of adobo sauce called for. I used only one TEASPOON, and if it were any spicier, I would have been unable to eat it. I suggest starting out with a small amount first. I topped these with pico de gallo. Delicious, and I will surely make these again.

Ham and Cheese Bowties

I followed this recipe exactly as written. It was good. I love colby cheese, but this was a little on the bland side. I think I would use sharp cheddar the next time. I will probably try this again.

Light Avocado Egg Salad

I never in a million years would have thought to do this with avocado. We love avocados here, so when I saw this, I had to try it. I only used six large eggs and it was perfect. Also, I used a spicy brown mustard instead of yellow. The kids and I absolutely LOVED this!! I'll probably never use mayo in egg salad ever again now.

Pudding Breeze

This is really, really good! I think the serving size is incorrect. I halved this recipe and made in an 8x8 glass dish. It fit perfectly and took exactly one 8oz tub of whipped topping for the entire recipe. Also, when I cut this recipe in half it then called for 1 1/2 boxes of pudding. I had to figure out how much half a box of pudding was, so I measured it. There are approx 7 Tablespoons in a box, so 1 1/2 boxes of pudding = 1 box + 3 1/2 Tablespoons...that's how I did it anyway, and it turned out perfect. It was still a little soft after chilling for two hours, but after about four hours it was perfectly firm. I will definitely make this again.

Meat Filled Manicotti

I followed this recipe close except I used whole eggs instead of the egg whites and seasoned the meat with garlic pepper. I would encourage everyone to spruce up the meat mixture to your liking. My kids LOVED this. It tastes like lasagna. Also, I took the tip from a reviewer on a different manicotti recipe and used it here. It WORKED and I WOULD NOT lie about it: Do NOT boil the manicotti first. You do NOT need to cook it first. It's easier to stuff it uncooked (I used a pastry bag). Put 1 cup of sauce on the bottom of 13x9 pan. Arrange stuffed manicotti on top of sauce. Add 3/4 cup of water to remaining sauce in the jar, put the lid on it and shake to mix. Pour over the top and sprinkle with cheese. Cover the pan TIGHTLY with foil and bake for 45 minutes. Carefully remove foil (watch out for hot steam), and continue baking for 15+ minutes until cheese is bubbly. The pasta will be cooked perfectly. I can't imagine precooking the pasta......it would be mushy. Don't be afraid of the cottage cheese. It has more flavor and isn't as dry as nasty ricotta:)

Blue Ribbon Overnight Rolls

Really good. I don't follow the overnight instructions. I give them about 4-5 hours instead and they still turn out PERFECT. The dough is easy to work with. I've made them several times this way with the same results.

Bacon Jack Chicken Sandwich

These are delicious. I never would have thought to use poultry seasoning on grilled chicken. It worked great. I flattened the chicken first, toasted the buns on the grill, added a slice of avocado, and left off the pickle. Everything else stayed the same. I will make these again.

Aunt Mary's Meatballs

I used the sauce portion of this recipe to make meatballs for a friend, but of course had to taste them first before I dropped them off. They were delicious. I liked the addition of the lemon juice. I did use 3 lbs of frozen meatballs which I baked first according to package instructions. While the meatballs were in the oven, I made the sauce on the stove and then combined everything in a slow cooker and cooked on low for about three hours before I dropped them off. One of the easiest things I've ever made. My friend said they were gone in less than 30 minutes...I should have made more. Thanks:)

Chocolate Chip Mini Muffins

I just made these and they won't last long. The kids are attacking them. I didn't have mini chocolate chips, so I chopped 1 cup of regular chocolate chips with a knife to make them smaller so they wouldn't sink. It worked great. I got 58 muffins, but I didn't fill the first batch up high enough. You can actually fill almost to the top. I've been paying $3 for twelve mini chocolate chip muffins at my grocery store's bakery. What a rip-off, and these taste better too. I won't be buying them from the bakery anymore. I'm REALLY glad I found this recipe today:)

Ruby Drive Sloppy Joes

I used slightly less ketchup and I used apple cider vinegar instead of white vinegar. This was one of the best sloppy joes I've ever had in my life. I'm pretty sure this is how I will be making them from now on.

Lemon Chicken Piccata

I used one lemon. I used one half of it for the slices and got a little less than 1/4 cup of juice from the other half. I wouldn't have wanted to use the full amount because this was VERY bitter. I had to add quite a bit of sugar to calm it down. I guess all lemons aren't the same, so I should have just added "to taste". I might try this again with less lemon...the chicken itself was delicious. I liked the idea to cut it into smaller pieces. It gives it more surface area for the light coating which tasted really good.

Shortbread Crust

Very good. I followed exactly, but my baking powder is about six months-old so I don't know if it even made a difference being in there. I poked the crust with a fork before baking it because others did. This crust is delicious on its own. I know this because I made cookies with the leftover dough from my pie and they were amazing. The dough is very easy to work with. I will use this recipe again for sure.

Fresh Strawberry Pie III

If you like Jello, then you will like this. A lot of reviews for this recipe and recipes similar mentioned that you had to leave this out to cool COMPLETELY before pouring into pie. I wish I would NOT have listened. I let it sit for about an hour and it was so firm that I had to heat it back up to get it back to a consistency I could pour. I used the short bread crust here on AR (delicious). I thought this pie was just "OK", but all of my kids really loved it. Also, I only used 3/4 cup of sugar and it was PLENTY sweet enough:)

Chocolate-y Iced Mocha

I'm REALLY glad I found this recipe today! I can see I'm going to become addicted to this. I love almond milk and like the subtle almond flavor it gave this drink. I put the ice in a large glass for measurement and then dumped it in my blender with the rest of the ingredients to make a "slushy" drink. It made quite a bit doing it this way...enough for two people. The ingredients and amounts were right on for the perfect iced mocha and I don't have to feel guilty about it:) This is INCREDIBLE!!!

Butter Cream Frosting II

I chose this recipe because it's the first frosting I came across here that I had all the ingredients for and I was in a hurry. I'm glad I stopped searching at this one. I'll NEVER make frosting any other way. It was easy to make and easy to work with, not to mention how good it tastes. I used butter-flavored Crisco instead of regular because that's what I had, and everything else exactly as recipe is written:)
