About this Cook
I found AR in 2003 when I did a search for pie crust after my daughter volunteered me to make pumpkin pies for her class Halloween party (she was 8 at the time. Now she is 19!!!....time flies). I've been hooked on this site ever since, visiting daily. I was born and raised in the deep south, but met the ball and chain when I was 17 and moved to his hometown here in Michigan. Twenty-one years later we have five girls. Our oldest is 19 and our youngest is 1. The husband is (and always has been) an OTR truck driver and only home on the weekends. He is a VERY picky eater, and doesn't like to try anything new, so when he is home, we prepare his boring favorites lol. Lame. During the week, the girls and I love to try new recipes.
My favorite things to cook
Everything except: Lamb (baa, baa), lima beans, chick peas, and organs....gross!!! I also hate mushrooms BAD, but everyone here likes them, so I cook with them and just pick around them nasty little rascals. I'm also not afraid of processed foods if I feel the need. Example: condensed cream soups. I use them about once a month and we're fit as fiddles here. Please don't judge me for using a can of soup. It's not worth it :) I hate when people over-solicit their personal food beliefs on me. INFURIATES me. Eat what you want, I'll eat what I want, leave it at that and mind your own business please :) Thank you.
My favorite family cooking traditions
Outdoor rustic cuisine, and of course the holidays :) I'm always in charge. My family does not live near, but my husband's family does, and not a single one of them knows how to cook. His mom is the worst cook on the planet. Sorry.
My cooking triumphs
Anytime the husband agrees to try a new recipe and likes it. I'm still working on him with this to this day.
My cooking tragedies
So many, I wouldn't know where to start. I have learned from EVERY SINGLE ONE of them though!!!!

Slow Cooker Broccoli Beef
I followed the ingredients and directions EXACTLY except I used lower sodium soy sauce because that's all I ever use. This was still very salty. I think I would leave out the bouillion next time or use low sodium beef broth instead. Other than that, there are no adjustments needed. I will make this again.

Greek Pasta with Tomatoes and White Beans
I made this for my daughter because she loves feta cheese. I think the cheese is what makes it. I used whole wheat pasta and I added a minced clove of garlic and a little Italian seasoning. I don't really care for feta cheese so I tried it with Parmesan instead and it was a little bland. I tried some of my daughter's with the feta and it was very flavorful IF you like feta :) It may be the easiest and quickest dinner I've ever made that didn't come out of a box!! My daughter loved it and it tastes great reheated the next day also.

Whole Grain Waffles
Just made these. Used regular whole wheat flour vs. pastry. I didn't have the wheat germ so I compensated with extra flour and flax. I added a couple pinches of cinnamon, used almond milk in place of skim milk and used additional applesauce in place of the oil - the only problem with that is I found I had to lightly spray with Pam between each batch which wasn't a big deal. Great flavor and texture. We all LOVED these and this will be our new waffle recipe. Thank you.
