Glazed Pumpkin Donuts

These are great. I made them in my donut pan and had a little batter left over once filling up the 12 holes. I'm not crazy about a strong pumpkin taste so I used half a cup of pumpkin and half a cup of applesauce. These are great for breakfast with a coffee or as an afternoon snack for the kids. Even my husband approved!! They are more muffin then donut but I am still a fan :)

Garbanzo-Oat Pancakes

I made a few changes based on reviews of it being a little bland. I used milk instead of water and added a tablespoon of sugar (used coconut sugar but any kind would work) and a teaspoon of vanilla extract. To help with the texture I ran the oats through my food processor (you could probably use oat flour too). They were good for gluten-free but if you don't have a wheat allergy I wouldn't bother. You are also getting extra protein and fiber with these so they are more nutritious than your average pancake.

This is delicious as written. For the reviewer who suggested ricotta instead of sour cream ... did you try the sour cream version first??? It's amazing. I did however mix some of the sauce with the pasta before layering. This is now a family favorite!

Kid Muffins

These are great. Super moist and really healthy. I've made them with bread flour as indicated or all with regular flour and it really makes no difference. I replace half the butter with extra apple sauce and half with extra coconut oil to make them even healthier. I like to use coconut sugar since it has a lower glycemic index and I tend to decrease the amount to 1/3 of a cup - they are still plenty sweet because of the bananas and apple sauce. Both my husband and 2 year old love them.

West African Peanut Stew

This was good but needs a few adjustments. First off the sauce is way too thin. I only used 3 and a half cups of chicken stock and next time will use even less. I also used a bit less PB since I was using less stock (about 2/3 cup). I used 2 lbs of chicken thighs and a can of garbanzo beans. The sweet potatoes got too mushy so next time I will add them with only 20 minutes left. I didn't have collard greens so I used spinach which worked out great. With these changes I will certainly make again.

Chicken with Black Beans

I really enjoyed this. I did use chicken thighs and cut the ginger up smaller than the recommended "matchsticks" so as to not bite down on big pieces. I didn't bother draining the chicken after the initial cooking as there was not much water left. Instead I just added a bit more cornstarch (about 2tsp mixed with 2tsp water) to thicken it up. The sauce was excellent and the dish was a winner in our house.

Hunan-Style Chicken

This is delicious. I would recommend leaving out the peppercorns though as they are too strong when you bite down on them. When making it a second time I replaced it with about a third of a teaspoon ground black pepper. I also left out the salt as soy sauce is salty enough. This was quick and easy, I will definitely make again!

Best Cranberry Chicken

Love this recipe. It's sweet and tangy and easy to prepare. On weeknights I prepare it the night before and keep the final 20 minutes of cooking for when I get home from work. I've also put the sauce on the raw chicken and cooked it for 45 minutes straight. Comes out great either way.

Easy Chickpea Curry

I thought this was excellent. I had to leave out the garam masala and still thought it was great. I added finely chopped cauliflower instead of potatoes to keep it low carb and used canned tomatoes. Very easy and tasty. Thanks for the recipe.

Orange Beef-Style Tofu Stir-Fry

This is really yummy! I do not normally love tofu but fried up like this, it could become a staple in my home. Even my meat eating husband was impressed. I would use different veggies next time as I don't really find carrots suit this dish. Peppers and snap peas would probably be perfect.

Quick and Easy Black Bean Soup

This was quite good. I left out the bacon to cut calories and replaced the can of water with more chicken broth to up the flavor. Came out delicious. Do make the garnish and use either sour cream or yogurt to top it off. Black beans are so healthy so any way to incorporate them into your diet is a winner - if it's tasty too than all the better!

Gyros Burgers

I really enjoyed these! Keep in mind that they are called gyro "burgers" so don't expect exactly what you would find in a Greek restaurant! They have that gyro taste but the texture of a burger. I served mine in a pita with tzatziki, lettuce and tomatoes. They were really tasty and fun!

Serbian Ground Beef, Veggie, and Potato Bake

My husband is on a low carb diet so we make this with ground turkey and skip the potatoes. I also use three tablespoons of greek yogurt instead of the half and half. The result is a low fat, low carb meal with lots of flavor! The mix of the spices is so unique. This is a keeper for us!

Whole Grain Breakfast Cookies

These are great! I used chopped up dates instead of cherries and cut the brown sugar down to just a couple tablespoons. I also cut the chocolate chips down to 2/3 of a cup (this was sufficient - a whole cup would have been too much) and replaced the oil with applesauce. I wrapped them up individually in plastic wrap and have been taking them to go as either a mid-morning snack or afternoon treat which is both delicious and almost guilt-free! Great recipe! I had never used agave nectar but had such a great experience using it in this recipe that it will be a staple in my pantry now!

Actually Delicious Turkey Burgers

Love these burgers! I used dried parsley so didn't quite use 1/4 cup also added some dried basil, worcestershire sauce and cayen for a little kick. Also added an extra egg white to ensure it all stays together. We topped the burgers with guacamole, the result was so good my husband is practically ready to swear off beef!!!

Banana Oatmeal Cookies III

Delicious! I replaced 1/4 cup of the shortening with apple sauce and cut the sugar down to 3/4 cup. They came out great. More of a muffin texture than a cookie but still great! Made some for a friend and her two year old daughter loved them!

Apple Yogurt Muffins

These muffins are delicious. I did not add extra sugar like some reviews suggested and do not think they needed it. They are a muffin not a desert! The only change I made was that I shreaded the apple instead of chopping it. I also skipped the topping as I was trying to keep it healthy. They came out great.
