Roxie's Bran Muffins
Great recipe, I subbed 3/4 cup applesauce for the apple and blueberries for the raisins. I added a teaspoon each of nutmeg, powdered ginger, ground clove, and powdered green cardamon and 2 tablespoons vanilla extract. I also added one grated carrot and 1 cup of chopped walnuts. I used all organic and non GMO ingredients since GMOs and pesticides are known to cause cancer. I will be making these again.

Banana Crumb Muffins
Good recipe, I combined 1 cup chopped thawed frozen organic peaches, 3 tbs chopped crystallized ginger, 1 cup macadamia nuts, organic raw coconut oil instead of butter, 1/2 organic brown and 1/2 organic white sugar, 1 tbs organic vanilla, 1 organic banana mashed, 1 organic egg. For the dry ingredients I substituted organic whole wheat flour and held back 1/4 cup and replaced it with organic ground golden flax seed. I would like to add oats to the topping next time to give it a bit more texture.

American Flag Cake
I skipped the white cake and did all red, the cream cheese frosting acts as the white stripe, I think it looks much better this way. The stars didn't come out for me, next time I'll use pine nuts or something....
