I chose this cake for cupcakes for my daughter's birthday to bring into her classroom where there is a dairy allergy.
I made this recipe with two changes: 1: I added 1 tablespoon of vanilla vs. 2 teaspoons and substituted 1/2 a cup of chocolate soy milk for 1/2 cup of water.
We sent these in as cupcakes (which took an even 20 minutes to bake) without frosting and the kids just loved them.
My daughter loved the flavor so much that she asked me to make her birthday cake this morning from this recipe, which I am doing now.
For a dairy free, delicious cake, this *is* a winner.
