Cinnamon Swirl Bundt Coffee Cake

This came out very moist and the cinnamon flavor was delicious! I substituted buttermilk for sour cream (didn't have any), added a tsp of cinnamon and a dash of nutmeg to the batter along with a little more sugar than stated, and I made a glaze to drizzle over the top using the recipe "Baking is Awesome" gave but doubling it.

Aw-some Coleslaw

This does remind me of the slaw at KFC. I made it for a cookout our family had and everyone loved it! I did as another reviewer had stated and used the bag slaw mix, keeping the sauce recipe pretty much the same with maybe just a drop more vinegar. I diced the onions and wisked them in with the sauce before pouring over the cabbage and carrots, doubling the recipe and using the whole bag of cabbage mix. Very, very good!!

Classic Macaroni Salad

I use 2 16oz boxes (alot of us), just adding the green pepper and onion for vegetables, sometimes adding some drained cans of tuna too. After the sauce is mixed (I use a little less vinegar and sugar than stated) in with the pasta I sprinkle and mix in some dill weed and cilantro. I've also made this only using the sauce, grilled chicken strips and cooked, frozen broccoli. This is a regular at family cookouts and a favorite.

Buttermilk Wheat Bread

This bread was so good! I had forgotten to check and see if the dough was too wet in the bread machine and it wouldn't rise properly, so I took the dough out when the bake cycle was just going to start and placed it in a bowl with a little extra flour then placing it in a buttered bread pan and letting it rise for about 20 min. in a 175 degree oven loosely tented with foil. When risen I lightly brushed the top with melted butter and baked at 350 until browned and done. In the dough itself the only changes I made was using 1/4 cup honey and only 1 rounded tsp. of sugar, about 1/4 cup less all purpose flour and using wheat flour in its place, and using melted margarine instead of butter because that's all I had. The bread was very moist and flavorful!

Baked Ham with Sweet Glaze

Oh, this was so good!! I only used a little water mixed with the juices from the ham and used a 9x13 glass baking dish. I used 2 tbl. spicy brown mustard instead of powder and sprinkled in some cloves to the baste. I cut some fresh pineapple in chunks instead of canned. I didn't have the cherries. I started basting the ham right from the start and made extra, stirring some in with the water and juices in the bottom of pan so all could drizzle some on their meat and potatoes as desired while eating. Oh, and I covered the ham loosely with foil while baking. The whole family love this!!

One Minute Chocolate Icing

The only things I changed was to add a tad more milk and I only beat mixture for about a minute or so. It had a great smooth consistency and poured easily over the chocolate bunt cake that my daughter and I made. I'm going to make this and use it as an ice-cream topping too, I think it would be good.

Chef John's Chocolate Mint Brownies

I finally found a more fudgy brownie like have been wanting!! I doubled the recipe and used a 9x13in. pan sprayed with baking spray, I added an extra rounded tbs. cocoa and doubled the vanilla because all I had was imitation. Sometimes I add a little coffee extract. Very good...fudgy but not too gooey, which I don't like. Thanks again Chef John!

Minute Chocolate Mug Cake

This is perfect if there is too much to do to fuss and wait, but you're craving chocolate or don't want to run the oven on a hot summer day! I used almond milk instead of regular and just a small swig over the amount of vegetable oil, regular chocolate chips instead of mini (all I had but worked out fine) and added a few edible pearl cake decoration candies instead of almonds because I didn't have any of them either (I didn't add many though), and I added a little coffee extract to the chocolate batter. It took a little under a minute and a half in my microwave. It was so moist and it rose real well and didn't collapse after taking it out at all. So good topped with Friendly's butter crunch ice-cream!! Thanks Chef John, and you were right in the video...no hockey puck here!!

Blueberry Sauce

I made as is with the exception of ommiting the almond extract and cinnamon at the end (my almond extract went awol). It was good without it though. Had it over vanilla ice cream with some sliced banana. I will most certainly make it again!!!

Taco Seasoning I

Very good, and very spicy! Spicy is good with me and most family members, but my husband isn't a spice person, although he thought the flavor was good, just a little too hot. Next time I'll probably pretty much leave as is for the rest of the family, and put a little aside for my husband with less black pepper and cayenne. All in all, very good! Oh..and I used regular salt instead of sea salt, just added less, I believe (rating late).

Emily's Blackberry Cobbler

First time making blackberry cobbler. I usually make peach. Blackberry is my new favorite! This was delicious topped with a scoop of vanilla ice-cream and some banana slices! The only changes were a little less sugar on top (I used about 3/4 cup) and I sprinkled a little blueberries on top with the blackberries.

Creamy Chocolate Frosting

The consistency isn't quite what I had hoped for, it was more like an icing instead of a frosting, but, in all fairness, I did use 2% milk instead of evaporated, and margarine instead of butter (it is all I had on both). This improved, though, by just adding a little more confectioners sugar. And the taste... better than I had hoped!!

Chocolate Chip Muffins

I upped the milk to a hair over 1 cup and upped the sugar some as well, I added a little under a half tsp. vanilla and didn't measure the brown and white sugar on top, just sprinkled them. They were very fluffy and moist. I baked them at 350, and they took about 20 min. Delicious!

Beer Bread I

So easy!! I made this paired with hamburger helper and green bean casserole. I didn't have self-rising flour so I made my own adding salt and baking powder to all-purose flour as others had suggested. I melted 3 tbs. Blue Bonnet margarine and poured it over the top of the bread before baking. Blue Bonnet seems to me to bake as good as real butter and taste as good too in almost anything. This bread looks as good as it tastes. I plan on making it again.

Smooth Sweet Tea

I made this to go with supper last night, and the whole family liked it, was gone in no time! I just put put some water on to boil, maybe a few cups, I didn't measure, and once it started boiling I added the baking soda and the tea bags, boiled for 6 minutes, the took it off the burner and scooped out the tea bags with a fork, the poured it in the pitcher putting a little cold water in it first because it was a plastic pitcher. I made a full gallon, and only used 9 tea bags and added about an extra half cup of sugar after doubling the recipe because my husband likes it a little sweeter. I'm not a big sweet tea fan and I liked this alot. I'll be making this again!

Strawberry Banana Smoothie

This was very good! I had to make some alterations though, based on ingredients I had on hand. I used one rounded cup of fresh, cut strawberries, not frozen, and 1 banana, 1 cup of vanilla yogurt,and instead of wheat germ and honey I added a small handful of coconut.

Mema's Snow Ice Cream

Soooooo good!! Can I rate this a 10?! Made this exactly as stated for the family, but made me a little bowl separate using a little rum extract instead of vanilla and shredded coconut.I put out my bottles of food coloring and let the kids make theirs whatever color they want. This recipe is such a keeper!! Thanks for sharing amanda!

121 Whipped Cream

My daughter and I made this to go on our iced coffee today. I didn't have heavy whipping cream, only regular whipping cream, but it still whipped up nicely and held its form. I also generously heaped the 2tbs. of powdered sugar and added an extra 1/4tsp. vanilla extract. It reminds me of the whipped cream in the can, but even better. So good!! Oh.. a glass bowl worked fine chilled in the freezer for about 5 minutes first, along with the beaters.
