Thai Chicken Curry with Pineapple

Delish! I made a lot of substitutions because I did not have everything on hand. Used soy sauce instead of fish sauce, chicken breast instead of thighs, 1 Tbsp red curry powder because I didn't have curry paste, and canned crushed pineapple instead of fresh...and it was still fabulous!

Aloo Phujia

This is to die for! I use can tomatoes and cook the potatoes before adding them to the skillet. (I like them on the softer side....) I only use half the cayenne and still find it delightfully spicy. Nom nom... Thanks for sharing!

Celery Seed Potato Salad

Loved it! I made some low fat tweeks and it still turned out great! I used fat free milk instead of cream and Miracle Whip light instead of mayo. Oh yeah and about half the butter.....and it still tasted fabulous! I will make this the same way again and again!

Red Veggie Stew

I thought this was an interesting combination and it tasted good. I omitted the red pepper because I didn't have any and used a white potato because it is what I had on hand and thought it was pretty good. I also used protein penne noodles because I didn't have any elbow macaroni, but think elbow may be better. I would add this recipe to my weekly rotation. Thanks for sharing your recipe!

Mama's Hearty Minestrone

I made it vegetarian. Left out the meat and added a can of white kidney beans. I also used veg broth to replace the chicken broth. And it was still very flavorful!

Easy Pasta Fagioli

I love this recipe and make it regularly (but I use veg broth for chicken broth). This time I didn't have any carrots or celery so I substituted zucchini and broccoli and it was still delicious. I like the strong tomato flavor. I will make it again and may incorporate even more veggies!

Delightfully spicy with only 1 teaspoon of cayenne. Will probably take the salt down to 1 teaspoon next time too. I found it to be a bit too salty when I used 1 tablespoon of salt. Taste testing while it was cooking and liked it more before the garam marsala was added; I will probably delete the garam marsala from the recipe next time. But there will be a next time! Thanks for sharing!
