Chef John's Chicken and Mushrooms

Had to use skinless chicken breasts, but they were delicious. Really juicy and flavorful. I would definitely make this again. Very easy to prepare and the prep time was fast. My husband thought this was very good.

Favorite Old Fashioned Gingerbread

This gingerbread was just like my grandmother used to make - full of flavor and moist and sticky. Fantastic. I followed the ingredients, but didn't have a 9" square pan so used an 8" which worked great. Lined the bottom of pan with silicone paper which was a good idea I feel. Only baked for 50 minutes as per other reviews and this was spot on. The house smelt wonderful after it came out of the oven. Definitely keeping this recipe and will make time and time again. Delicious!!!!!

Italian Chicken Skillet

I made this last week and my husband and I both loved it! It's so easy to make and with everything cooking in one pan it makes for easy clean-up afterwards. Because it was a last minute idea I didn't have everything it called for, so had to modify it slightly. Used radiatore pasta which worked very well. Also had rotisserie chicken on hand so added that towards the end. I didn't have fresh spinach but had some that I had frozen so also used that. It really was very very good. So pleased that I tried it. I have emailed the recipe to my daughter as I thought her family would like it. I would definitely do this again and would recommend it.

Blueberry Sour Cream Coffee Cake

Very easy to make and it tasted great. Didn't have blueberries but had raspberries instead so used them in the recipe. Really enjoyed it and so did my husband. The only problem I had was getting it out of the pan, but I think that was probably my error.

Beef, Mushroom and Guinness® Pie

I made this last evening and my husband and I thought it was delicious. I actually used red wine instead of Guiness because I did not have any in the house. It made a good substitute. Other than that I followed the recipe to the letter. I made my own puff pastry which was more labor intensive, but well worth the effort.
